I’m not too much of a foodie dietitian to share that you may occasionally find a PB&J in my lunch box. It’s not complicated and we almost always have the ingredients on hand. PB&J makes a simple lunch or snack when you’re crunched for time.
The PB&J is one that I recommend often to my athletes too. It’s convenient to pack in a gym bag or backpack and munch on in between classes or before/after a workout for extra energy.
With athletes in mind, I created this PB&J Smoothie for Cabot Creamery. It’s packed with nutrition from the Greek yogurt, milk, strawberries and peanut butter! A yummy childhood favorite filled with protein and carbohydrates makes a delicious recovery drink post workout. Research shows that dairy proteins (casein and whey) can actually help to stimulate muscle growth and reduce body fat.

PB&J Smoothie
serves: 2
1/2 cup skim milk
1 cup low-fat Cabot Greek yogurt
2 cups frozen strawberries
2 tablespoons peanut butter
2 tablespoons strawberry jelly
Place all ingredients in blender and process until smooth. Serve in two chilled glasses with a straw.
