We’re back home. After a week of travel, it feels amazing to be home together and reunited with Pearl. She stayed with my sister last weekend while we were up in Auburn. I’m excited to have a full work week again, normal workout routine and get back to cooking!! YAY! Eating on the road get’s exhausting. I always end up craving veggies when I get home from a trip, so they are the focus of my menu this week!
On the Menu
Monday: Salmon with Butternut Squash Soup & Brussels Sprouts
Tuesday: Roasted Chicken with Potatoes, Carrots & Lemon
Wednesday: Mushroom Burger with Sweet & Beets Chips + Green Salad
Thursday: Crockpot Chicken Tinga Tacos. If you’ve been reading my weekly menus for a while you know that we love our crockpot chicken nachos, I fell in love with this chicken tinga recipe from Jeanette’s Healthy Living and I’m excited to give it a try this week!
Friday: Halloween Party @ our House— menu to come but I know I’m going to make a batch of this Sweet Potato Pie Dessert Hummus!!

Since it’s getting a bit cooler here in Orlando… womp womp. I made you a warm and healthy soup. This recipe was inspired by my old Winter White Chili recipe {terrible photos included} but because it was sooooo good I wanted to recreate it and get some new shots. Of course I can never make a recipe EXACTLY the same so I’ve updated the recipe to fit current food style. #foodbloggerproblems

Description
Cozy up with a bowl of this White Chicken Chili— it’s filling, veggie, and protein packed… perfect for a fall night snuggle.
Ingredients
- 1 teaspoon olive oil
- 1 large onion, diced
- 1 bell pepper, diced
- 1 tablespoon minced garlic
- 1 pound chicken breast
- 48 ounces chicken broth
- 1 can corn
- 1 can garbanzo beans
- 1 can chopped green chilies
- 4 cups chopped kale
- 1 tablespoon cumin
- 2 teaspoons chili powder
- salt and pepper to taste
- 1 cup 1% milk

Instructions
- In large stock pot, heat olive oil over medium heat.
- Sauté onions, peppers and garlic until translucent.
- Add chicken breast and season with salt and pepper.
- Add half chicken broth to pot and bring to a boil.
- Once boiling, cover and reduce heat to low boil and cook for 10-15 minutes until chicken is cooked through.

- Add chicken back to pot and toss in corn, beans, chiles, kale and seasonings and stir to incorporate.
- In separate bowl, stir together remaining chicken broth and milk.
- Add milk broth to soup, stirring quickly so milk doesn’t coagulate.
- Serve hot and topped with cheese, cilantro, and lime juice if desired. Soup freezes and reheats well.

This chili sounds perfect for a cool evening! One of my goals for the next month or so is to incorporate more veggies into my dinner meals. It’s always easier for me to pack a big salad for lunch, but when it comes to dinner I usually have one veggie on the side. It’s better than nothing, but looking for more variety! Thanks for sharing your meal plan – it will help with this!
