This is a bit of a belated Cabot Fit virtual race recap but I wanted to wait until it was officially November to announce our giveaway winner. If you missed it, Cabot Creamery held a virtual race to raise funds for Feeding America and local food banks. As a Cabot Fit team member, Cabot donated $100 to the Second Harvest Food Bank in Orlando! I love how they are all about giving back to the community!
I chose to run the 10K distance in no better place on earth than Auburn, AL. That’s where I started running in college so it is always nice to go for a run when we go back to visit. Plus we got to bundle up for part of it!
My bro, his girlfriend Kali, and Eric joined me for the run. It was more of a run/walk/and sightsee for me, with the bummed ankle but I was just happy to be out there and enjoying the weather.
The boys of course would run ahead of us and then we’d find them doing pushups while they waited on us. Talk about #CabotFit.
I was super glad to be running around campus again and there were lots of game day festivities going on.
Naturally, we stopped to pick some cotton. (Auburn has a big agricultural program.) I think it’s so neat to see how cotton grows. I couldn’t help myself.
We also ran over to one of my favorite running trails in Auburn! It feels so good to get off the road and immersed in nature.

So onto the recipe for Roasted Cranberries and Quinoa Oatmeal! Lately, I haven’t been into oatmeal as much as I use to be (but the hubby is). I use to be a bowl-of-oatmeal-every-morning type of girl but I just LOVE eggs so much these days that I cannot sacrifice my eggs for oatmeal very often. I really enjoyed this bowl of Roasted Cranberries and Quinoa Oatmeal however because the quinoa gives the oats an even better texture!

Description
Roasted Cranberries will change your life. They are all cinnamonny and mapley and topped on a comforting bowl of quinoa oatmeal! Just know, a bowl of Roasted Cranberries & Quinoa Oatmeal will be sure to give you that holiday fever.
Ingredients
- 2 cups fresh cranberries
- 1 teaspoon coconut oil
- 1 teaspoon 100% pure maple syrup
- 1/2 teaspoon ground cinnamon
- 1 cup old fashioned oats
- 1/2 cup cooked quinoa
- 1 cup 1% milk
- 1 cup water
Instructions
- Preheat oven to 425 degrees F; line baking sheet with parchment paper.
- Pour cranberries onto baking sheet and toss with coconut oil, maple syrup, and cinnamon to coat. Bake for 15 minutes.
- Meanwhile, in a medium sized pot, combine oats, quinoa, milk, and water, and bring to a boil.
- Stirring consistently, reduce heat and continue to cook until most water is absorbed.
- Serve warm and topped with roasted cranberries.

you cook the quinoa first, then add the cooked quinoa with the raw oatmeal and water and milk?

Yep!! I think pre-cooking the quinoa (via using leftovers or buying it pre-cooked to save time) makes the oats taste even better.

Love Michael Buble’s Christmas CD… and him in general. 🙂 I ran a race at my college last year and it was probably my favorite I’ve ever done. It’s just so much fun to run through campus and relive a lot of great memories. The cranberries sound delicious; I’m so happy they’ve made their way into other meals other than Thanksgiving dinner.

I’ve never seen cotton growing out of the plant before! This oatmeal looks yummy! Like you, I enjoy mixing oatmeal with other grains—I think plain Jane oatmeal can be a bit boring sometimes.

Thanks Regan! You were doing much bigger things!! 🙂 Still beaming proud of you! The trail is right off Donahue kinda near College intersection.. it’s in the woods and behind the tailgating spots. They are doing a LOT of construction and part of the woods were cut down– so sad!
