Cilantro Lime Brown Rice, Chipotle-style. OMG…This rice is the best!! I’ve made it 3 times in a week already!
Hey friends! I’m happy you all enjoyed the Vegetarian Sofritas yesterday. Sorry for the delay in getting this Cilantro Lime Brown Rice up sooner. I know, you waited so patiently. My plan was to get it posted and scheduled last night but I started attacking my email inbox! AHHH, and then before I knew it, it was midnight and Parker woke up needing to be nursed.
We had a big day today. Parker and I met up with some girlfriends for a baby bootcamp by the lake. The babies played together while we did a little circuit workout. It was really good to get outside this morning and get some girl time while the babies entertained each other and our sweat on at the same time.
After the workout we ran home to met up with Parker’s new nanny for the summer. Well to be exact, we hit Starbucks drive through first, because first {iced} coffee. My mom and mother in law have been so awesome with taking turns taking care of our little guy when I have to work outside the house. Now that he’s getting a little older and my schedule has been a bit more chaotic this past month we’ve been needing some extra hands. I’m so excited Parker is going to get to spend time with her this summer while she’s home from school. She’s super sweet.
This afternoon Parker had his first swim lesson!! We’ve taken him to the pool before and he seems to really love the water. We have a group of first time moms in our neighborhood with babies under a year, and it’s great fun because we are all within walking distance of each other. So we decided to put the babies in swim lessons together. An instructor comes to one of the girl’s houses so it’s so nice and convenient. Pictures to come! Baby is a natural water bug– he loved it and was submerged twice!
Now I’m getting a little break to write this recipe for you because the little guy is fast asleep. The pool water does it every time, just hope this carries over to a good nights sleep too. Mama would love that!

Description
Cilantro Lime Brown Rice, Chipotle-style. OMG…This rice is the best!! I’ve made it 3 times in a week already!
Ingredients
- 2 cups water
- 1 cup brown jasmine rice
- 1 lime, juiced
- 2 tablespoons cilantro leaves
- salt to taste, if desired
Instructions
- Add water to a medium sized pot and bring to a boil.
- Stir in rice and lime juice and reduce heat to medium/medium low to a “roaring simmer”.
- Cover with lid, and continue to check rice periodically to stir. I know the package usually says not to take the lid off and check the rice, but when I do that and it sticks every time!
- Once all the water is absorbed (about 30 mins), add cilantro leaves and fluff with a fork. Salt to taste if desired.

Oh yum! I make a very similar dish, but I’ve never done so with Jasmine rice. I’m totally switching it up next week!
