Almond Joy Cookies that taste just like the candy bar! Chewy, sweet and almondy – YUM!
Eric and I spent a lovely weekend with friends in Dothan, Alabama. We grew up with Brian and Rachel and it was really neat to visit them in their new city and get some good quality time with them.
It was a really active and relaxing weekend that was low key and just how we like it.
On Saturday morning we went to a HIIT workout class followed up by a chilly walk on a nature trail. The scenery was beautiful, and so different from what we are familiar with in Orlando.
That night afternoon Rachel and I used my basic chocolate chip cookie recipe and made Almond Joy Cookies! I have to share that we prepared these the old fashioned way, creaming the butter and sugar by hand. Yep, great third workout of the day 🙂 My arm was burning!
Later we prepped a nice dinner with the boys and watched a movie together. On Sunday we made my first ever protein pancakes for breakfast, went to church and grabbed a quick bite of really southern food before heading out of town.
We are back home and reunited with our little Pearl. It was very sad leaving her, but we knew she was in good company and loved by our fam. I feel so rested today (despite the fact that we lost 2 hours) and ready to tackle the week! Have a good one y’all!

Almond Joy Cookies

Description
Almond Joy Cookies that taste just like the candy bar! Chewy, sweet and almondy – YUM!
Ingredients
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1 cup gluten free all purpose flour
- 2 tablespoons coconut flour
- 1/2 cup shredded coconut
- 1/2 cup sliced almonds
- 1 cup chocolate chips
Instructions
- Preheat oven to 375 degrees F. Line baking sheet with parchment paper.
- In large bowl, cream butter and sugar together.
- Stir in egg, vanilla, baking soda and salt until combined.
- Slowly add flour and stir until just incorporated.
- Stir in shredded coconut, almonds, and chocolate chips.
- Evenly spoon dough, forming uniform ball and placing on baking sheet.
- Bake 10 minutes, allow to cool 2 minutes; then transfer to drying rack.

I don’t typically have gluten free flour on hand. Will the recipe work with regular all-purpose flour? If so, is it still in the same quantity?
