These Best Pancakes Ever, Seriously {Gluten Free Buttermilk Pancakes} are one of the most popular recipes on my site. I’ll go ahead and tell you upfront that I cheated on this recipe for Gluten Free Peach Pancakes because it’s a remake of that all-time favorite recipe, but with peaches this time!
It’s so worth it you guys… because right now the peaches are so fresh and juicy. If you’re not gluten free, just use regular all purpose flour in this recipe– it works interchangeably!

Oh and you should know, freezing leftover pancakes is my saving grace as a mom.
Because my son LOVES pancakes for breakfast.
And not gonna lie, our little not even two year old is already a food snob. He won’t eat frozen box pancakes– they will just sit on his plate. They must be HOMEMADE, and he will devour them. Really, kid?
So when I make pancakes the goal is to have leftovers… that go straight into the freezer! It saves my life when I need homemade pancakes for breakfast and I don’t feel like cooking.

Description
The BEST gluten free peach pancakes you’ll ever eat. Light, fluffy, and just peachy. Gotta get some. Freeze leftovers for quick breakfast when you don’t feel like cooking but want homemade pancakes.
Ingredients
- 2 cups gluten free all purpose flour (recommend rice based blend)
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons brown sugar
- 2 eggs, slightly beaten
- 2 cups buttermilk
- 2 tablespoons coconut oil
- 1 teaspoon pure vanilla extract
- 1 large peach, diced + additional sliced peaches for topping
Instructions
- Place flour in a large bowl; whisk baking soda, salt and brown sugar into flour.
- In a separate bowl, whisk together eggs, buttermilk, coconut oil and vanilla extract.
- Pour wet ingredients into dry ingredients and stir just until combined.
- Fold in diced peaches
- Ladle ¼ cup of batter per pancake onto hot lightly greased griddle.
- Cook pancake until it bubbles on one side, and flip.
- Cook until golden brown on other side. Serve pancakes topped with sliced peaches and maple syrup!
- To freeze leftover pancakes, stack pancakes separated with parchment paper and place in freezer safe bag.

I always freeze leftover pancakes (with a piece of parchment paper between them so they don’t stick together) — for the same reason you do…. my daughter’s favorite breakfast is pancakes — fine on a Saturday — not so much on a Tuesday morning…. These look amazing.

I am SO glad I stumbled on these from a link on another site. I ate pancakes or waffles almost every weekday morning of my life until about 12 years old. It was unusual in the 60s but from the time I was 8 months old my mother worked full time. That meant I had two fulltime working parents so I needed a sitter. My mom would take me to my great-grandparents (that too was very unusual for people to know their great-grandparents let alone have them as their sitters. My mother needed to be in the next state about 40 minutes away around 6:30 in the morning. This meant she needed to have me to Memaw and Nanny’s between 5:30 and 6:00. Now she would NOT allow them to give me breakfast, she felt it was her motherly duty (despite I would have MUCH rather slept, I have NEVER been an early bird, always a night owl) to feed me a GOOD breakfast each day. And this did NOT mean cold cereal. My mother was NOT a milk drinker, she grew up on a farm where Grandma pulled the milk from the cans before the milk truck came to collect them. Well most people don’t know before milk is homogenized, pasteurized, tastified and commercialized it essentially taste like whatever the cow ate that day. This is NOT always a good thing. Sometimes they get in wild garlic and other things. So my mom rarely drank milk. By chance, she marries someone who grows up at a dairy (this same Memaw & Nanny by the way, HIS grandparents). No connection to the milk on my mom’s farm. Well of course the milk is GOOD by then, they put milk on EVERYTHING. Well I don’t know about you or your little guy but I just can NOT go greasy bacon and eggs at 5 am in the morning. Give them to me at 9 am and I love them but not while I’m still trying to sleep. My tummy couldn’t handle the grease. So, I asked for pancakes OR especially WAFFLES. I LOVE waffles. Have you ever used this batter for waffles? So she wouldn’t have to rise even earlier, my mom learned how to make the waffles, freeze them, and guess what, put them in the toaster. She invented toaster waffles LONG before they were in the grocery store aisle. We should be wealthy from that patent now. But another problem. I do NOT have a sweet tooth. Yes, that “not” is correct. And pancake syrup to me is just WAY too sweet. So…one morning she had leftover gravy leftover from fried chicken from dinner the evening before and rewarmed that. I LOVED it. Next morning I wanted that and there wasn’t any so she tried some Campbell’s Cream of Chicken Soup. I learned over time Cream of Mushroom is just about as good. Then she began buying those Chicken a la King boiling bags Banquet used to sell. I often made this for dinner when in college years later. These pancakes you make and freeze can also be used for savory items, especially if you eliminate the peaches, but you wouldn’t have to. I actually prefer breakfast foods for a late dinner more so than I do for breakfast. Next time you little one wants something in the evening try something more savory for over your pancakes or perhaps try using the same batter for waffles. I bet they’re scrumptious as Mary Berry would say. Oh, and by the way, I ALSO ate breakfast WITH my Memaw and Nanny every morning too, THEY had cereal. But by 8 am, I was ready for another one. Then, after school, I would have a huge snack, often a medium frozen pizza, not sweet junk most of the time and THEN….went home and ate dinner my mom prepared. You would think I would have been the size of a house but I wasn’t, I was a tiny 105 lbs. when I graduated high school and it wasn’t all these sports kids play today. They have 3 times the sports we had. I was a bookworm, I HATED exercise. However, I was in the marching band and never picked up weight in college until I quit the band. This is why I don’t understand how kids have such problems today. I ate like a little piggy. But it was NEVER soda except on special treats nor junk food like chips, pretzels, etc., once again, unless the holidays, family reunions or other special events. My brother the same. Not sure if I’m going to try these without the fruit as I LOVE freshly picked peaches, second only to black raspberries and wait until they’re in season. Or…go ahead and try without fruit as I LOVE pancakes. Decisions! Decisions!
