Easy Instant Pot Crack Chicken and Broccoli Recipe
This recipe for Instant Pot Crack Chicken and Broccoli is the real deal! Not only does it have minimal and simple ingredients, but it’s made in the Instant Pot which is a huge #momwin. I love me a hearty meal made in the IP.

What is crack chicken?
Crack chicken is a one of my favorite recipes that takes just minutes to throw together! The ingredients are simple: chicken, cream cheese, ranch dressing packet, shredded cheddar cheese, broccoli and sweet potatoes.
If you have an instant pot or slow cooker, you can just throw in the first four ingredients and you’ll end up with a creamy, addictive recipe that is sure to be a staple in your house! It is a perfect addition for weekly meal prep or a weeknight meal for the whole family to devour.
How to Make Slow-Cooker Crack Chicken
Slow-cookers work wonders for people with jam-packed days and little time to prepare healthy dinners. Before you run out the door, add the chicken, cream cheese, and ranch packet. Set this baby on low for about 8 hours while you are out and about and when you come back the chicken will be ready to shred! Shred the chicken with a couple forks, a food processor, or a hand mixer and then mix it back in the crockpot.
Sweet potatoes can be roasted in the oven, but if you’re short on time, just place them in a microwavable safe bowl and set it for about 10 minutes. Add more time until your potatoes are reach your sweet spot!
When the potatoes are done, slice them in half and top them with your ready-to-go crack chicken, broccoli, cheese, and bacon! And that’s how easy it is to make slow cooker crack chicken!
How to Make Instant Pot Crack Chicken?
If you don’t have an instant pot yet, it is time for you to get on board! Instant pots save busy mommas like me time in the kitchen. Just dump the ingredients and go!
When I use my instant pot for this recipe, I literally just combine the chicken breast, cream cheese, and ranch seasoning packet. Secure the lid and start it on poultry setting for only 12 minutes! Busy moms don’t have time to wait for an oven to preheat, and that is why this kitchen appliance is my life saver! Once the chicken is cooked, remove and shred. I used to spend lots of time shredding chicken with a fork, but now I opt to grab my hand-mixer and save myself even more time!
Next, stir in the shredded cheese and chopped broccoli. Before you’re ready to eat, cook the sweet potatoes in the microwave for about 5-8 minutes. Once complete, scoop a serving of this creamy goodness on top of your sweet potato.
Can you place frozen chicken in the instant pot?
Yes! Another reason why I love to use my IP. You will need to adjust the time that the chicken cooks, and double check that your chicken reaches 165 degrees F before serving.
Is Crack Chicken and Broccoli Healthy?
This low-maintenance and filling dinner only amounts to 360 calories and provides 34 grams of protein! The variety of veggies provided from the sweet potato and broccoli add a healthy dose of fiber and vitamin A which do wonders for your wellbeing.
Are you trying to cut back on calories? Sometimes I like to swap out the cream cheese for plain, greek yogurt. I promise you and everyone else in your family will never be able to tell!
Trying to go low-carb? This recipe can easily be made keto-friendly by simply swapping the sweet potato for a bed of delicious greens, zucchini noodles, or cauliflower rice!
What else can you use crack chicken with?
On top of being a great dinner option with sweet potatoes, the crack chicken can also be a crowd-pleasing appetizer as a dip for crackers and pretzels!
With the help of a little lettuce and a taco shell, you can transform this recipe into crack chicken tacos. I have also used leftovers to make a yummy crack chicken sandwich.
This would also be super tasty over a bed of pasta or zoodles.

Ingredients
- 2 pounds chicken breast
- 4 ounces cream cheese
- 1 packet ranch dressing
- 1/2 cup shredded cheddar cheese
- 4 cups broccoli florets, chopped small
- 8 sweet potatoes 🍠
- 8 strips of center-cut bacon, chopped
Instructions
- In instant pot or slow cooker, add chicken, cream cheese, and ranch seasonings. Secure lid and cook for 6-8 hours in slow cooker or in IP on poultry setting for 12 minutes, until chicken is fully cooked.
- Shred chicken and stir in cheese and broccoli.
- Meanwhile microwave sweet potatoes for 5-8 minutes; stuff sweet potatoes w chicken mixture and enjoy.

I’m puzzled: Don’t you need to add water or chicken broth for this recipe to work in an instant pot?

Hey Matt– my IP doesn’t require water when I cook chicken HOWEVER most of the newer instant pots do trip a “burn sensor” if you dont have 1/2 to 1 cup water in the pot. What I’d recommend is adding the liquid to cook the chicken if your instant pot is a newer model, drain off most of the liquid after cooking and then add softened cream cheese and spices and shred. Then stir in your cheese and broccoli. Hope this helps!

You can steam it but I find that because they are chopped so small they steam to al dente when mixed with the hot chicken.
