Things are settling in over here with the move and I’m feeling more normal again. These last two months have been really challenging with packing up our entire house and moving it across town and a lot of other life happenings that I’ll be sure to fill you in on soon.
With my kitchen supplies in boxes for a good week, one appliance that I didn’t pack away was my blender so that I could whip up tasty little snacks like this Almond Butter Date Shake. What I love about this recipe is it uses pantry staples like dates and almond butter, perfect for me as I’ve been really busy and didn’t grocery shop that last week we were in the old house.
This is a tried and true recipe that I’ve made like 20 times, and I’ve finally taken a picture of it to share with you. WIN! What I love most is the delicious and creamy taste the almond butter adds to this smoothie. Almonds are a powerful snack, just one ounce of almonds has 6 ounces of protein, 4 grams of fiber, heart healthy fats, plus 35% Vitamin E, 20% magnesium, and 8% calcium. Snacking on almonds or almond butter is super satisfying keeping hunger at bay.

Description

Ingredients
- 2 medjool dates
- 1 tablespoon almond butter
- 1 scoop no sugar added vanilla protein powder
- 3/4 cup unsweetened vanilla almond milk
- 1 1/2 cups ice
Instructions
- Place dates, almond butter, protein powder, and almond milk in a blender and blend until smooth. Add ice slowly and blend until all ice is incorporated and shake is creamy.

Yum–this looks perfect for warm weather! I love using dates in my shakes and smoothies. A really good tip I got from a reader is to keep dates in the refrigerator in a small container of milk. They’ll blend much more easily once they’ve been soaking overnight or so. I keep a dish of dates in my fridge to use all week.

Looks great! What kind of protein powder do you use? I have trouble knowing which is best ( whey, soy, etc), not to mention finding one that tastes good without artificial sweeteners. Just wondering! Does this use artificial sweetners or none? Thanks.

Thanks Beth– I use Publix GreenWise Whey Protein Powder, i love the simple ingredient list and the flavor because it blends well and isn’t chalky. It’s sweetened with stevia.
