Almond Flour Chocolate Chip Cookies
So when the husband is out of town for work and the kids are tucked into bed, mama makes almond flour chocolate chip cookies FOR ONE. One bowl, one healthy chocolate chip cookie. Come to mama.
I posted a picture of this on instagram and everyone went coo coo for almond flour cookies. That lights my fire! I also shared that they are tasty in keto, vegan, and paleo forms. Soooo I was then up until midnight baking this recipe to get it perfected for you friends.
Sorry not sorry, I had to whip up this cookie recipe in all the ways to deliver the goods ASAP. When a fellow mama is in need of a single serve chocolate chip cookie, girl I had to bring it.
Oh and ICYWW, this is an egg free cookie recipe, so you know what that means? Yep, it’s totally fine if you decide to spoon it up out of the bowl as edible cookie dough.

Almond Flour Cookies Nutrition
So because everyone wants to make healthier chocolate chip cookies these days, tweak recipes to meet their dietary preferences and make adaptions to cookies I tested these babies ALL THE WAYS. No need to worry if you want edible cookie dough, keto cookies, paleo cookies or a vegan cookie— we’ve got you covered.
Ohhh and because this cookie is made with almond flour and flax, each chocolate chip cookie has 5 grams of protein!
How to make Keto Cookies?
Keto cookies are divine because they are all about that butter. And so am I! I tested this recipe completely sugar free so no keto sugar substitute and they were still tasty. In a traditional cookie, brown sugar helps the cookie to spread and caramelize giving it that crunch.
So keto cookies are often “soft” but soft chocolate chip cookies are legit too.
And when cookies are sugar free that’s a big health win, so bam. Take your pick, you can use a sugar substitute like erythritol, swerve, or stevia (I even used stevia extract in this recipe and it works too), or leave it out completely for a less sweet but still delicious cookie.
Kitchen Tip: Be sure to opt for keto chocolate chips like Lily’s Chocolate Chips sweetened with stevia, if you want Keto Chocolate Chip Cookies.

How to make Almond Flour Cookies Paleo?
If you need paleo chocolate chip cookies, I recommend using coconut sugar in place of brown sugar and paleo chocolate chips. I prefer Enjoy Life brand chocolate chips because they still do have a little sweetener but they are paleo friendly.
You can totally do the stevia sweetened ones chocolate chips too.
How to make Vegan Almond Flour Cookies?
For the vegan cookies, opt for coconut oil or vegan butter. Coconut oil cookie are a little softer, soft I you like soft cookies go with coconut oil, but if you like them more “buttery” and crispy choose vegan butter.
Almond Flour Chocolate Chip Cookies are easy to make vegan because they are egg free and use flax eggs. Use Enjoy Life Chocolate Chips for dairy free version when making vegan chocolate chip cookies.
Edible cookie dough for one?
Hey, if you don’t want to fire up the oven to make one hot cookie, no problem. Because this cookie dough recipe is vegan and egg free it can easily be edible cookie dough recipe. And if you opt to go that route, feel free to sub in peanut butter or almond butter for the oil/butter in this recipe.
And of course— no need for baking soda in edible chocolate chip cookie dough, so leave that out if you want to eat right out of the bowl.

Ingredients
- 1/2 tablespoon butter (or coconut oil/vegan butter if desired)
- 1 tablespoon brown sugar (stevia or erythritol if keto)
- 1 tsp ground flax
- 1 tsp water
- 1/8 tsp baking soda
- Pinch of salt
- 3 tablespoons superfine ground almond flour
- 1 tablespoon semi sweet chocolate chips (vegan or stevia sweetened if desired)
Instructions
- Preheat oven to 375 degrees F and line baking sheet with parchment paper (enough for one cookie).
- In a small bowl, melt butter (or oil) and stir in brown sugar (or alternative sweetener).
- Stir in flax and water and let sit for 2 minutes to allow flax to thicken.
- Stir in baking soda and salt until combined and then add almond flour until crumbly dough forms.
- Stir in chocolate chips and roll dough into a ball with your hands.
- Press and shape cookie onto cookie sheet and sprinkle with sea salt; bake for 12 minutes.

These are so delicious! I have been making the for the past several months – ever since I found the recipe. I use a no-sugar natural sweetener, such as Lakanto, instead of sugar. Today, I even used the base without the chocolate chips, and added oatmeal, raisins, cinnamon, vanilla, and nutmeg, per my mom’s request for oatmeal raisin cookies. They were great, too! I think I might need to adjust the bake time or temp when I make that modified recipe, though, because the bottoms seemed to burn toward the end of the baking. Thanks so much for sharing!!! 🙂

WOW…. earned every star. I’ve lost track of how many low carb/gluten free cookie recipes I’ve tried or gone to over priced gluten free bakeries for and were total garbage/inedible. This recipe was absolute perfection and I greatly appreciate you sharing it!
