I have been studying my days away lately, and like most students, I have found some ways to procrastinate. I was reading one of my favorite blogs, Bella Eats, and she had a really great recipe for banana date bread. I have a few bags of dates in the pantry, thanks to my sweet friend, Tara Gidus, and have been looking for just the right recipe to use them. I love the smell of cinnamon and banana baking in the oven and the wholesome ingredients in the recipe, but I was a little skeptical that the bread would be dry since it didn’t have any butter or oil and was made with whole wheat flour. But boy was I wrong, this loaf is really moist! The dates, apples, and bananas give the bread the perfect texture and softness and provide natural sweetness.
