I have been studying my days away lately, and like most students, I have found some ways to procrastinate. I was reading one of my favorite blogs, Bella Eats, and she had a really great recipe for banana date bread. I have a few bags of dates in the pantry, thanks to my sweet friend, Tara Gidus, and have been looking for just the right recipe to use them. I love the smell of cinnamon and banana baking in the oven and the wholesome ingredients in the recipe, but I was a little skeptical that the bread would be dry since it didn't have any butter or oil and was made with whole wheat flour. Meatless Fajitas
It has been a while since I have posted. I have been going through many changes--it is just that phase of life that I am in. With finishing my internship, trying to find that first job, studying for the big RD exam, to my computer crashing, and getting oriented to my new computer--I got a MacBook :) I am also doing some revamping of the blog and about to launch my website! Spinach Quiche I have been wanting to make a quiche for a while now, and yesterday I found this really cute quiche pan so walah... here it is! I love quiche because it spices up the morning routine, it delivers a nice change. This recipe is delicious and has a lot of nutritional value--it's loaded with antioxidants and high quality protein. Happy Valentine’s Day!
Chicken Pot Pie Eric had class until 9pm on Valentine's day, so we didn't plan anything special, or little did the other know :) When I got home from my internship on Monday, these gorgeous tulips and a sweet little note was left for me on our counter. I met him for a study date at Starbucks between classes. After coffee, I ran to Publix to grab a few items and then began cooking a special dinner. I made a simple yet wholesome chicken pot pie.
