Double Chocolate Cherry Skillet Brownie a la mode with vanilla ice cream, almond butter drizzle, and chocolate shavings. This skillet brownie is lower in sugar and made with healthier ingredients like almond butter, whole grains, dried Montmorency tart cherries, and dark chocolate. Thanks to the Cherry Marketing Institute for sponsoring this post. Everyone NEEDS a good skillet brownie in their life. Needs as in it’s a necessary and non negotiable truth. In fact, one of my most popular posts on this blog is Why Eating A Brownie Can Be Good For You. This brownie is made with better-for-you ingredients but not too healthy to where it doesn’t even taste like a brownie. Brownies need to be decadent. It’s their design. Butter, sugar, egg, chocolate, flour… and more chocolate. Let’s not make it ... View Post
Fiesta Engagement Shower
It's a fiesta... engagement shower! If you're throwing a couples shower this Fiesta Engagement Shower is a fun theme. Everyone loves chips, salsa, and sangria! So we threw my "Mexicano" brother and his fiance a fiesta engagement shower. He has the same parents as me, and no we are not Mexican, but he LOVES the Mexican culture-- the food (remember this salsa verde), the language, the people, the food. {Who doesn't love Mexican food?? We could eat in most nights of the week.} He names all his dogs Spanish names-- Fiel and Loco and he's the king of making guac. Truly, I thought he would find himself a Spanish gal to marry. But I will say he came close in that he did meet his fiance in Honduras. As fate would have it, they met on a dental mission trip, he was the Spanish translator ... View Post

Sheet Pan Chicken and Veggies
Winner winner chicken dinner. This Sheet Pan Chicken and Veggies is a big hit in our house. Simple to prep and easy to clean up! Can you tell from our weekly eats in my Weekly Eats and Fitness in Review posts that we live off simple dinners or it's just not happening...i.e. we will end up eating out if dinner isn't convenient enough at home. Not only does dinner have to be pretty easy to prep, it needs to be easy to clean! I hate to say it but the clean up is sometimes what keeps us from eating in. A big pet peeve of mine is wake up to a dirty kitchen in the morning, so dishes need to be cleaned the night before or my morning doesn't start off good. Washing dishes pre cup of coffee....errrr No. Talk about waking up on the wrong side of the bed. But that's what happens when dinner is too ... View Post
Almond Butter Acai Bowl
This Almond Butter Acai Bowl tho. The taste of almond butter with acai and banana in a bowl topped with all the toppings. Plus who can resist extra almond butter drizzled on top?! Almond butter in every bite! Have you tried acai? I made an acai bowl for the blog last year and then worked on a photography project with a local start up Create Your Nature, and made and photographed and ate bowl after bowl of acai. And am quite into acai... especially with al la almond butter. Or AB as I like to call it for short. Because it's just more mildly creamy than peanut butter. I like to get the all natural almond butter from trader joe's because it's pourable since the only ingredients are almonds (and salt if you get the salted version). No added oils or sugars or stabilizers or flavorings like ... View Post
