This Whipped Banana Cream Cheesecake Shake is 100% indulgent without all the guilt. It's high protein made with bananas and cottage cheese and no added sugar! Love this is the healthy way to eat Banana Cream Cheesecake. Baby must really like cottage cheese because I've been eating cottage cheese any way I can get it-- muffins first and now smoothies! Or maybe he just likes cheesecake? You know, that's probably it because his dad definitely has a sweet tooth. I keep dreaming of cheesecake flavored things lately. My ultimate cheesecake is the Banana Cream Cheesecake from the Cheesecake Factory. OMG. I love all the whipped topping and the bananas they add to the side. It at least makes me feel a little healthy ;) Here lately I've been adding cottage cheese to my smoothies. ... View Post
Slow Cooker BBQ Chicken Tostadas
Slow Cooker BBQ Chicken Tostadas-- pulled chicken breast cooked with Trader Joe's famous Carolina Gold BBQ Sauce topped on crispy baked tostadas and veggies. This weeknight dinner will quickly become a family favorite. High protein and gluten-free. I don't go to Trader Joe's too often, even though it's right down the road from us. It's usually super crowded and the parking lot is a nightmare, but more often I don't go because I don't feel like I can get EVERYTHING there. Sure I can get by going there for one week that is if I don't need toiletries. When I end up braving the crowd at TJ's, I'm always surprised at the yummy finds and how much $money$ I end up saving. This week I discovered their Carolina Gold Barbecue Sauce. Ohhhhmyyyygoodness, y'all! Have you seen it or tried it? It ... View Post

Happy {almost} Friday! Today I woke up 6 months pregnant! I know, crazy right?! I made him this Chicken and Veggie Breakfast Skillet and this No Bake Skillet Apple Crisp. Eric changed his diet up in March-- minimal sugar, dairy, and gluten free, and he hasn't looked back so I've been working on creating some new recipes that we can both enjoy. He's finally eating a bit more cheese (and sugar)... thank the good ... View Post

Greek 7 Layer Dip
This Greek 7 Layer Dip is loaded with only the good stuff-- roasted red pepper hummus and loads of veggies. Perfect appetizer to serve at any party. No baking required! We are in a judgement free zone right? Welp, this might have been my lunch. I mean it counts as a healthy balanced lunch-- healthy fats, lots of veggies, and carbs. Maybe I'm missing out on protein but it's decently balanced enough to be a lunch.. so maybe I'm rationalizing, but at least it's healthy, right? I think this Greek 7 Layer Dip would also be awesome smeared in between two slices of whole grain bread with roasted chicken or turkey. Hello flavor explosion. Or ditch the bread all together and top this salty goodness over a bed of greens. Or I mean, eat it like you are supposed to with pita chips. This dip ... View Post
