Hi friends! I've had a really active week which I'm excited about. Depending on how hectic things are in the week, I can be tough to nail all of my workouts that I have planned. Does that happen to anyone else? On Tuesday, Eric and I took sunrise walk and had breakfast at Starbucks I stuck to my usual the Bacon, Egg, and Gouda. I love being able to walk to Starbucks. It was gorgeous out with a little chill in the air. I actually had to layer a fuzzy jacket with a vest to keep warm. I love how the sun lights up the trees off the lake. Look at that bright green color and nope no filter added. We spotted a mama and her 11 ducklings. The were just too cute. We walked for about 25 minutes before we had to head back to the house to get ready ... View Post
Life lately. We are moving.
Hi friends-- I've been a bit out of it lately as you can probably tell from the lack of blogging. To be honest I've been in a funk where I don't want to cook, like. at. all. so we've been eating out a good bit. Last week I was in jury duty for 2 days and also found out that we have to move out of the house that we love. We are renting and our lease is up at the end of April and we cannot renew because the landlord's family is moving in. Talk about bummed when we heard the news. We've made this little community our home and we were not quite ready to find a new place. It's in one of the prime spots in College Park with cobblestone streets and really good neighbors all around who have pumpkin carving parties, holiday get togethers, and decorate the light posts during ... Happy Birthday Eric + Our Disney Staycation
Happy St. Patty's Day!! We had a big week last week which is one reason that I've been really quiet on the blog front. I have recipes made for you I just haven't had time to sit down to edit the pictures and type up the recipes. Life can be exhausting sometimes, right? Last Wednesday was Eric's birthday, so we celebrated with my parents that evening at Bonefish Grill and then spent the weekend on a staycation at the Fort Wilderness Lodge at Disney with Eric's family. Eric and I haven't ever taken advantage of a little vacation at Disney before, I guess it comes with the territory because we live here, we often want to get away for a vacation. But Disney is like it's own little bubble. We didn't do the parks at all, just stayed at the resort and enjoyed the pool, pina ... View Post
Sweet Potato Smoothie
This Sweet Potato Smoothie is creamy, tart, and refreshing. I can't get enough of that sweet orange color!! Sweet Potato Smoothie We said goodbye to two of our interns yesterday that have been with us for the past 6 weeks. I love being a preceptor to interns that have a passion for our profession because I know that they will turn into the best RDs. Yesterday was National RD Day (or RDN as they now like to call us), but I'm a rebel like that and I haven't switched over to the dark side. I remember the dietitians that took the time to mentor me in school and during my dietetic internship, and they may not have known it then or now but they made a difference and helped to shape my career. Beginning in Auburn, Scott Sehnert was one of my first RD ... View Post
Ginger & Greens Smoothie
Slurp on a Ginger and Greens Smoothie made with fresh ginger, frozen fruit and 2 cups of greens!! It's super refreshing and cleansing! This post is sponsored by the National Frozen & Refrigerated Foods Association (NFRA), all opinions are my own. Happy March! How is it already March? As much as I enjoy the Christmas season, Easter is up there as one of my favorites. Maybe it’s because I’m obsessed with birds and nests and bunnies and spring colors and decor, but to me it also symbolizes a fresh start and spring cleaning. This time of year just makes me cheerful. March is also National Frozen Foods Month, so I’m excited to highlight some of my favorite ways to incorporate foods that are simply frozen for convenience, however rest assured these foods are ... Why Eating A Brownie Can Be Good For You
I received a lot of wonderful feedback on my post a few weeks ago addressing the possibility of eating too clean. Thank you to all who offered your opinions! These responses have prompted me to continue with writing on this philosophy by discussing the value of moderation, and how eating a brownie can be good for your health. Many times we hear the argument, “but what could that type of food possibly offer me? It doesn’t have any nutritional value!” And, yes, white flour, sugar and all of the delicious ingredients used to make brownies might not be things you think are the healthiest, there are still benefits to occasionally enjoying one. First and foremost, health encompasses much more than just exercise and food choices. I’m sure that a lot of people standing by the ... View Post
