Big thanks to Rockin’ Refuel for sponsoring our race team and this blog post. All opinions are my own. A few weeks ago Rockin’ Refuel reached out to me to put together an Orlando race team for Warrior Dash in Clermont, FL, and being big fan of Rockin’ Refuel and a lover of running races, I was pumped to join in on the fun. Eric and I did Warrior Dash a few years back so I knew what I was signing myself up for. :) Warrior Dash is a 5K, adventure race with obstacles and lots of mud. Race morning we drove over to Clermont, which is about 50 minutes outside of Orlando. We had an 8:30am race start and planned on meeting the team at the Rockin’ Refuel tent before the race to take pics. (Gotta take before and after pics with you’re doing a mud run.) It was pretty chilly out ... View Post
Is it possible to eat too clean?
Thanks to everyone for the great feedback and encouragement on my latest article on MyFitnessPal, How Mindful Eating Can Help You Lose Weight + 5 Tips to Get Started. If you missed it check it out with that link. One of my very first TV apperances was on this topic of eating "too clean". When I was looking back at my notes on this topic I can't believe it's been nearly 2 years!! Boy does time fly. I thought I'd do a little coffee date today and answer Q&As on when eating clean is taken too far. So go grab a cup of coffee or make one of these Coffee Lover's Protein Shakes. The point at which eating clean and pure interferes with normal living and socializing it's given the term "orthorexia". I'm going to sort through what I think about this new trend that we are seeing in this ... View Post
Sweet Chili Thai Salmon
Sweet Chili Thai Salmon is a spiced up version of your traditional baked salmon. Sweet, hot and perfectly baked salmon out of the oven in 15 minutes flat. Hello Monday. We had a great weekend. Eric and I did the Warrior Dash in Clermont with some of our favorite people (more on that tomorrow) and spent Saturday afternoon with his grandma for her 88th birthday!! On Sunday I did a meal prep for one of my clients and worked on finishing up a few projects during the Super Bowl. I actually got out for a run-- like a non stop hard run with little breaks, for about 5+ish miles with Eric and his brother. No one wore a watch or knew what time we started so we are kinda just guessing at the mileage but to me it felt like more than 6 because I haven't been running. But it was good. I was very ... My 10 Grocery Must Haves
Yesterday I was building a list with my intern Lindsay of the most important foods for a college athlete to buy at the grocery store, and I got to thinking this might be fun to do on the blog. A list of the top 10 foods that always land in my grocery cart each week, and show you how I use them. Eggs. I'm obsessed. Eggs in the morning, for sure almost. every. day. You can count on that. I like the way that scrambled eggs make me feel first thing in the morning. My favorite way to eat eggs is with a big bowl of roasted veggies on top of either roasted potatoes or grits. Get one of my Veggie Breakfast Bowl recipes here. Greens. I like having a big salad for lunch so I always stock up on greens that are in the containers not bags. I usually go for the "organic girl" greens ... View Post
Healthy Potato Skin Poppers
These Healthy Potato Skin Poppers are a crowd pleaser and would make a great Super Bowl party appetizer. Their smokey flavor and creamy texture will keep 'em going back for more. Vegetarian and Gluten Free. I had planned on making these poppers for you last week for The Recipe Redux, but they were one of the few recipes that I created that didn't work. Booo. Usually when I'm in the kitchen, food is amazing the first go around, but then there are times when I'm making something totally new to me, and of course when I'm trying to bake something off the wall--- like Vegan Red Velvet Oreos made with beets. I know crazy, but that's what I do. My intern and I spent the whole afternoon yesterday trying to perfect a "healthier" red velvet oreo for the boss. With the launch of the new red ... View Post
