Because I kinda have a hard time letting the holiday season go. Can ... View Post
Vegetarian Spaghetti Squash Boats
This post is sponsored by the Canned Food Alliance. Vegetarian Spaghetti Squash Boats are the ultimate healthy comfort food made whole simple ingredients just right for a weeknight. Who's set New Year's resolutions already? I can tell you this much, it's on my to-do list. My goal is to sit down long enough to evaluate last year and put together a list of goals for 2015. Maybe I will need to resolve to clear my schedule and prioritize my goals before I can set new goals. Any who, I'm a list maker and thrive when I have a schedule with things to cross off. Even simple stuff like "give Pearl a bath" or "send so and so an email". Maybe this is extreme, but I can easily forget things if I don't write it down. I love how the New Year gives a fresh perspective and a time to look back at how ... View Post

Christmas Traditions 2014
For those that celebrate I hope you had a wonderful Christmas!! It was extra joyful for Eric and me this year. Lots of family time and time off work for both of us, which is a rare occurrence but it was really needed and restful. Which is why I've been quiet on the blog as well. I hope you all had some good space from the usual routine to rest and relax and enjoy the people that mean the most to you. Eric and I kicked off the week with a little family get together at our house filled with warm bowls of chili and s'mores over the came fire. I always love entertaining especially this time of year. We went home to our parents houses (who live 10 minutes from each other), and stopped at Eric's parents house first for a new tradition, Christmas Eve Brunch. I made a Sausage ... View Post
Training Tuesday: Tennis Edition
Hey friends! Eric and I went out to play tennis on Sunday. It was my first time on the court in over 5 years, and needless to say I'm still sore. After playing for 10 minutes, the game was whipping me. These old familiar movements that I haven't done in half a decade! Gosh, that makes me sound really old. I grew up playing competitive tennis, and it's a sport my whole family played. My brother DJ who also lives in Orlando played tennis in college at Florida Institute of Technology and my littlest bro Tyler is a freshman on the team at the University of Central Florida. DJ gives tennis lessons in Orlando so naturally, he was drilling me with a basket of balls as soon as I stepped on the court. I'm like whoa-- slow down. This lady hasn't seen the court in years. DJ ... View Post
