Yummy breakfast bowl packed with roasted veggies makes for an easy weekday morning! Healthy and veggie-filled breakfast ready in less than 5 minutes! Hey friends! Guess what day it is.... every time I think about hump day I can't stop won't stop with receipting the Geico camel commercial.... that camel cracks me up every time. So I've been craving more veggie-filled breakfasts. I do veggie smoothies which are quick, however I'm an egg girl! A lot of times breakfast looks like eggs with cheddar and toast. I know NO color!! But making a veggie omelet just isn't fast enough when I'm rushing around in the morning. ... View Post
It’s beginning to look a lot like Christmas at the LaRues
Happy Friday! The house is slowly getting ready for Christmas despite the fact that the tree is still unfinished :) I love the look of it in the living room. On tap for the weekend-- Eric and I are going to a Christmas cocktail party tonight for the Young Lawyer's Section of the Orange County Bar Association. I'm excited to get a little dressed up tonight! All the proceeds from the event are going to teens in need this Christmas. Eric hung the garland on the door last weekend. We found this fresh garland and wreath at Trader Joe's. I still want to hang a red bow on the wreath to give it an extra pop of Christmas. Tomorrow Eric is running the OUC half marathon with his firm, and I'm going to be a cheerleader!! The race is downtown so I'll be there ... View Post
Healthy Shepherd’s Pie for Two
This Healthy Shepard's Pie for Two is the ultimate comfort meal. It's meaty and veggie-fied topped with insanely creamy mashed potatoes. You're welcome. Mushrooms. With stems or without? I've always been a believer that you need to pluck the stems off the mushrooms right away! They are tough and hearty and I didn't see much use for them. Then as I was cooking the other night, this urge to not waste food even-the-lonely-mushroom-stems came over me. It was very bizarre, but I learned a new thing about mushrooms. PS-- I'm a mushroom lover, if you didn't know already. They do make me super happy that I try to eat all the mushrooms, even if they are on someone else's plate. Not the slimy gross raw mushrooms. I just can't get into those, but the slow cooked, grilled, or roasted garlicky ... View Post
Thanksgiving Weekend Festivities 2014
Was anyone protesting this week? The long holiday weekend was amazing, I don't know about you but it was tough to get back into the swing of things after Thanksgiving. Eric and I did a Turkey Trot at Lake Eola on Thanksgiving day. It was a pretty chilly start and warmed up rather quickly. I didn't have that great of a run, but I did run!! With all the walk/running I've been doing it was a stretch for me to run consistently for 3 miles! After the fun run we drove to my parents for lunch and to Eric's grandma's for dinner. Our families are about 15 minutes from each other so it makes it easy, or rather a really long day :) But it's worth it because at least we don't have to choose who we will see on the holidays. I contributed my Apple & ... View Post
When did Thanksgiving turn into an all you can eat buffet?
Hey guys, with Turkey Day tomorrow I got to thinking, soooo when did Thanksgiving day turn into an all you can eat buffet? While good food should be enjoyed, the turkey or pumpkin pie does not deserve center stage! To me we should put more emphasis on enjoying each other's company vs falling into food coma. After all, it’s about giving thanks and cherishing family, friendships, and life. FYI-- the hubby decided to take over the blog today, just be fair warned. The idea that the cultural norm is to stuff yourself like a turkey, and fall asleep after a big ‘ole feast, has never sat well with me. This isn’t the last time that you’ll get turkey, and dressing, and cheesecake! It truly is okay to give yourself permission to eat until your satisfied and leave the rest for later. I know, ... Flourless Fudge Brownie Bites with Greek Yogurt Frosting
These Flourless Chocolate Fudge Brownie Bites are made with 5 whole foods, no sugar added, and topped with pillowy Peanut Butter Greek Yogurt Frosting. Ahhhhhmazzzzzzing!!! Avocado, dates, cocoa, peanut butter, almond milk. Blend them together and you get a rich dark chocolate mouse. Go ahead and lick the spoon! Yup-- I was excited when I tasted amazing chocolate batter without any added sugar. So I decided to bake them because I needed a yummy based for my Peanut Butter Greek Yogurt Frosting. This is the second batch of frosting that I made in a week, I just couldn't believe how good it tasted-- dates, greek yogurt, peanut butter. When I first made this frosting I mixed coconut greek yogurt with PB, and no dates. IT WAS FAB too but I wanted this recipe to have no added sugar so I went ... View Post
