Make you banana pancakes Pretend like it's the weekend now. And we could pretend it all the time. Can't you see that it's just raining? There ain't no need to go outside. Don't those lyrics just make you happy? It's actually a pretty dreary day here in Orlando and every time I find myself making banana pancakes I can't help but sing that song. Let me let you in on a little secret, my mama made banana pancakes famous before Jack Johnson did. We grew up on this stuff... every weekend almost my mom would make pancakes and the banana pancake was her staple... she actually referred to these as "plain" and if we wanted mix ins like blueberries or chocolate or pecans we would add them to her banana pancake base. I love how mama makes pancakes! ... View Post
Oh what fun! Disneyland Avengers Race Weekend Recap
Whoa, how did Friday happen? This week flew by and I missed you, genuinely. I've been a bit swamped with getting caught up after leaving mid week last week for Disneyland. So that's where I've been in case you were wondering. I promised a recap a few days ago, but better late than never right? Eric and I had some good QT (quality time in our language) at Disneyland and I want to share some of the highlights of the trip. Eric and I were invited out to Disneyland for the Avengers race weekend with my boss, Tara (she's the RunDisney Nutritionist) and speaks at all the expos so she gave us the VIP treatment...flight, hotel, park hopper tickets, Disney cash, time off work, I mean come on... she's amazing, right? Sorry, she's taken ladies and gents. We arrived very very early on ... View Post

All the foods that I brought home are super fast foods, we’re talking dinner ready in a flash. I figured that you all ... View Post

Brussels & Butternut Naan Pizza
This sweet and savory pizza is loaded with the goodness of the fall season. Brussels sprouts and butternut squash make this naan pizza hearty and healthy! It’s that time again to eat all the butternut squash…sorry.not.sorry. There was a time when butternut squash intimidated me. That may or may not have been a few months ago. I’d do a little freak out when the orange veggie would stare me down in the produce isle. Plus, would I REALLY like it? While I’m a fan of pumpkin flavored things, zucchini and yellow squash are not high up on my list. Until that day my world was turned upside down. I was at Panera Bread (I know, I know) and ordered the Butternut Squash Soup after the cashier talked me in tasting it. In that very first sip, I couldn’t believe what I had been missing. ...
