Funky Monkey Pancakes
Shaved dark chocolate, smashed banana, coconut flakes, and coconut yogurt = Funky Monkey Pancakes. You will melt. It's Monday and I don't have my usual Meal Prep post this week because we are leaving on Wednesday for California. Have I ever told you that I have the BEST boss in the world? Tara invited Eric and I out to Disneyland for the Avengers race weekend... just for a vacay. Yep, she's da best and I want to shout it to the rooftops! I've been in a pancake mood--- in fact these little cakes were supposed to be apple cinnamon and then I saw Eric's Liberte coconut yogurt in the fridge and I instantly became in the mood for coconut. Sorry honey. Then my brain started dreaming chocolate... which lead to bananas because chocolate is always better with bananas. ... View Post
Slow Cooker Steak Nachos with Spicy Butternut Squash Queso
Not your mama’s nachos but these Slow Cooker Steak Nachos with Spicy Butternut Squash Queso are as flavor filled as it gets! Butternut squash makes the queso creamy with half the cheese to save fat and calories. Oh and the steak is crazy tender, perfectly seasoned and made right in the slow cooker! Thank you all for the awesome feedback yesterday on the “How Much Protein Do You Need” blog. I’ll be sure to include more posts like this! Let me know if you have a specific nutrition topic too that you’d like me to blog about. I’m a bit under the weather today, anyone else hit with a cold? Sometimes it’s hard to tell if it’s an allergy attack or cold with me, but with this spotty weather that we’ve been having everyone seems to be getting sick. Kara inspired me to drink tea before my ... View Post
Leucine: Shedding Light on Protein
How much protein do I need to eat in a day? It’s a common question that I get when working with athletes. We all know that protein is essential but what’s the optimal amount and can too much be harmful? You might have heard the fear stories that eating too much protein can cause kidney problems, but this isn’t likely in the healthy athlete. {Of course, check with your doctor before changing your diet drastically.} While you might be more dehydrated if you are pounding the protein, the bigger problem is your body might be missing out on important nutrients. Hello, vitamins and minerals?! We need more than amino acids to perform optimally, stay healthy, and prevent disease. I’ve seen athletes on 50% calories coming from protein diets and they’re missing the mark on many vital nutrients ... View Post

Roasted Cranberries will change your life. They are all cinnamonny and mapley and topped on a comforting bowl of quinoa oatmeal! Just know, a bowl of Roasted Cranberries and Quinoa Oatmeal will be sure to give you that holiday fever. This is a bit of a belated Cabot Fit virtual race recap but I wanted to wait until it was officially November to announce our giveaway winner. If you missed it, Cabot Creamery held a virtual race to raise funds for Feeding America and local food banks. As a Cabot Fit team member, Cabot donated $100 to the Second Harvest Food Bank in Orlando! I love how they are all about giving back to the community! I chose to run the 10K distance in no better place on earth than Auburn, AL. That's where I started running in college so it is always nice to go for a run ... View Post
Apple & Kale Power Salad + Weekly Eats & Workouts
Refreshing Apple & Kale Power Salad topped with tart cherries, almonds, blue cheese, and perfectly dressed with apple maple vinaigrette! It's officially the holiday season and I've been smiling from ear to ear and ready to bust out the Christmas lights! I'm just kidding, but we have been blazing christmas tunes all weekend. The temps dropped on Friday night and we had a chilly weekend with highs in the low 60s! I think that officially put my into the holiday spirit. We had friends over on Friday night for dinner and passed out candy & cheese to the trick or treaters. Thanks to Cabot, I had something healthy to give the kiddos and they loved it (especially the parents)! No I wasn't a smurf for Halloween but I did have on all blue so this wig that my bro acquired at work was ... View Post
