It’s been a whirlwind of a week over here, and ready for life to be back to normal and have a slow weekend home. But not just yet— I’m giving a presentation today at the Dragonboat Festival in Sarasota for Breast Cancer Survivors and catching a plane to Auburn, AL for the football game this weekend vs. South Carolina. I had so much fun at FNCE this week that I wanted to be sure to share with you some of my favorite finds— lots of 2015 trend spotting and new foods to get excited about. siggi’s Pumpkin Spice Icelandic Style Cream-Skyr. Sweet Potato Pie Dessert Hummus
This Sweet Potato Pie Dessert Hummus will rock your socks. It tastes just like mama’s sweet potato pie but with all the healthy ingredients. Eat this hummus anytime— breakfast, lunch, dinner, dessert. Serve with apples and cinnamon pita chips at your fall party! I’m sorry, like really really sorry. I feel like I need to get it right out in the open and confess how sorry I am for posting such a tempting and addicting recipe. I may or may not have eaten this hummus for two meals yesterday. Yeah, it’s one of those can’t stop won’t stop, and won’t eva get sick of it types. I don’t think that dessert being in the title makes it off limits for meal time, do you? I mean after all it’s chickpeas and sweet potatoes… that’s like dinner food, right? Yeah, that’s what I thought too. Dinner food ... View Post
Maple Pecan & Ginger Granola
This Maple Pecan & Ginger Granola is savory and sweet with the perfect blend of fall flavors--maple, pecans, & cranberries. It's yummy topped on Greek yogurt and oatmeal! It’s been a while, but I’m glad to back. After attending Blog Brûlée, I realized how much I missed being a part of The Recipe Redux. I went through a funk with the blog and wasn’t being consistent with blogging and posting my monthly recipe posts with the group that I had to step down. That little separation lasted too long IMO, but let’s put the past behind us, eh? Every month on the 22nd, I’ll be teaming up with the Recipe Redux and posting a recipe based on the theme/challenge of the month. You can also check out the fabulous bloggers’ recipes in this group by clicking their images below. This month theme ... View Post
Butternut Squash Chili Mac
This Butternut Squash Chili Mac is the ultimate comfort food. Chili, cheese, pasta.. holy yummo. Bonus, it’s a high protein veggie meal too that is sure to satisfy a hungry appetite. Happy Meal Prep Monday!! I’ve been busy at FNCE this week but the hubby is at home enjoying some home cooked meals {hopefully}. I try to set him up with different meals when I go out of town so that he has options for lunch and dinner instead of resorting to eating out. That’s one thing I dislike about traveling is all the eating out.. it’s fun the first day but gets old real quick. Ya feel me? I got into Atlanta on Saturday and pretty much headed straight to meetings and events. It’s been a fun reconnecting with with lots of my RD & blogging buddies. Last night a few of us went to dinner at Canoe ... View Post
