This Baked Chicken Parmesan is so moist, flavorful, and healthy. With minimal ingredients it's easy to prepare in a hurry on a weeknight. Serve with spaghetti squash that you can make in the microwave! I love when a weekend is both restful and productive. It makes Monday so much easier! I find that staying on top of my meal prep makes a big difference -- I don't have to worry about what I'm having for lunch or dinner, and I don't get stuck grabbing meals out of the house. #notgoodonthebudget Plus, having things on hand helps the whole family from feel famished and cranky. How to Use iPhone for Food Photography + Egg & Potato Hash
Warm up with this Egg & Potato Hash recipe this fall. It's just perfect for a comforting & healthy breakfast. This week has flown by, I cannot believe it's Thursday already! Last Saturday after Miracle Miles, Eric and I raced to our hometown to attend a baby shower for one of our sweet friends, and attended my grandma's 80th birthday party! We also got together for breakfast with friends on Sunday (they are having a baby too). We drove back to Orlando mid afternoon on Sunday and made church that evening a priority. It feels like we have been zooming through the week without slowing down much. If I'm not home for a day on the weekend, it makes it so challenging to get meals prepped for the week, and of course that also means food photography doesn't happen either. Booo. But ... View Post
Falling back in love with running plus #TrainingBites
I started running in college and fell in love, which lead me to the triathlon team. Running was a place of stillness and escape for me. Being so rigid with tennis in high school, I wanted freedom. And running gave that to me. When Eric and I met, he really didn't like to run. We started running together even though he complained a bunch in the beginning. He's totally into running now, and I've found myself to be the one complaining about running.Eric's style of running is Sunday afternoon at 12 PM, 95 degrees and humid, and because we run together, I've endured the sweat sesh, because as he says "it's making me stronger". Okay, that is not my type of running. It kinda puts me in a cranky mood. This weekend we ran the Miracle Miles 15K (9.3 miles), ... View Post
Blueberry Chia Smoothie #TrainingBites
It feels super good to be back at CrossFit this week. We did a heavy set of squats before the WOD on Monday and Eric and I are still sore!! Yesterday morning Eric and I went on a quick 2.5 mile run together around the neighborhood. Well, it was quick for Eric but I took it easy because I didn't want to over stress my ankle. It needs to stay good for Miracle Miles this weekend. ... View Post
Pumpkin Power: All about Pumpkin Nutrition and Healthy Recipes
PSL is back and is rearing his big head in our lives. Don't get me wrong, I'm all about the orange squash and all-things-fall, but maybe we are all a little bit obsessed? Pumpkin munchkins, anyone? Pumpkin is a naturally nutrient dense food, that is until we douse it with sugar and oil...#judgmentfreezone The seasonal fall favorite is one of the best known sources of beta-carotene, a powerful antioxidant (also responsible for the orange color) which is converted into vitamin A in the body. One cup of cooked pumpkin will deliver 100% of the recommend daily allowance (RDA) for vitamin A which assists in good vision, fertility, and hormone production. Pumpkin is also great to eat for lowering blood pressure and protecting overall health because it contains fiber, vitamin C, and ... View Post
Blog Brûlée + Weekly Eats
I made back to Orlando late last night from Blog Brûlée, an RD food blogger retreat in Vermont. Connecting with old friends and meeting new ones that inspire me really builds me up. Lovely ladies right to left: Kara Lydon, McKenzie Hall, Danielle Omar, Min Kwon, Me While we did a great deal of learning from each other it was more like a “party” where we just spent time together, talking about food blogging from SEO and building a brand, to food photography, styling, and photo editing. I’ll be sure to share more about my major takeaways in upcoming blog posts. Ann and I got out in the chilly weather yesterday morning for a hike to get our blood flowing before a day of travel. Vermont is so beautiful with the scenic views and lots of rolling hills… took me back to the ... View Post
