Happy #MealPrepMonday! We had another low key weekend which gives me lots of time to go grocery shopping and prep our meals during the week. Yesterday I prepped our veggies for omelets, egg bowls and salads... and made this yummy pasta bake for lunches. While I love salads for lunch (especially tuna!!), Eric requests a hearty lunch meal. Happy Friday! We have another RELAXING weekend in store! Heck yes. Tomorrow we plan to do a little CrossFit in the morning and instead of the Mobility & Mimosas after the 8am WOD it's Mimosas & Moving. CrossFit Orlando is moving down the road and they need a few extra hands to transport equipment. The new box will be much closer to our house, about 1.5 miles away, so Eric and I are talking about running there when it opens up next week! Happy Friday! I love the feeling I get waking up on Friday morning, something about it excites me that I'm one day closer to spending two full days with my love.
