Eric isn't usually one for my creative sorts. Maybe it was that time I put tofu in the tacos or that other time I added anchovies in the salad dressing? He now begrudgingly asks "what's the secret ingredient". Then I roll my eyes and say just eat it. Maybe not the loving wife reaction you'd imagined? We'll my brother was over the other day and he is very adventurous and will almost try anything. Keybank Vermont City Marathon {Cabot Fit Team}
First off, I’ll be the first to admit I’m not very good at training for a marathon. The marathon requires some serious dedication. By nature, I’m a weekender. There is nothing more that I’d rather do on a Saturday morning than to wake up causally and pop over to the Farmer’s market with Eric and enjoy a cup of coffee. So when I was invited to be a part of the CabotFit team this year to run the Keybank Vermont City marathon (my 3rd and his 2nd) we decided to do our long runs on Sunday. Developing and sharing recipes is one of my absolute favorite parts of my job as a dietitian! When I started this blog I didn't realize that my love for cooking that has developed over the years could become a big aspect of my career. In the off season, I'm enjoying sharing recipes in a very practical way: private cooking demos. I've been cooking in-home with our athletes and clients and now bringing this to the public at the Downtown Orlando Pubic Library. Cabot Fit Team Farm Tour
The Cabot Fit Team is a group of foodie and fitness bloggers that are supported by Cabot Cooperative farmers to help spread the goodness of Cabot cheddar through living a healthy lifestyle. Many of you know I traveled to Maine last year for the Beach to Beacon 10K and I was invited back for the Vermont City Marathon and Relay (I'll share all about the race in another post). I love this team because I love running, travel, and I'm a total cheddar snob, but most importantly I love this team because of the bloggers that come together and Cabot people that I get to meet and become friends with. Hiking Camelback Mountain
This morning 115 people from the CPSDA conference set out to hike Camelback Mountain. When I signed up to go on the hike, I was imagining a nicely paved trail winding up a mountain. Boy was I wrong!! This was so not a hike, it was a straight up mountain climb! There were points when I was scaling the mountain and sliding down and crawling. It so gorgeous which made it well worth the climb. My biggest concern was that I didn't twist anything or overextend myself because it's taper week!! I also thought I'd share with you a little about what I'm learning from the conference.
