Hi friends! I'm at the CPSDA conference (Collegiate & Professional Sports Dietitians Association) in Scottsdale, AZ this week. Remember last year the conference was during our 3rd year wedding anniversary?! I flew into Phoenix yesterday morning and the conference kick off party was last night. When I arrived to town yesterday I was starving and really thrown off by the time change. It was 8:30am Arizona time and that 5 hour flight was draining... got lots of great reading in though! So far I've really enjoyed this area, and yesterday I had my first Trader Joe's experience! Can't wait until the Orlando location opens up! So I've been wanting to share a few things with you that I've been really loving lately.... Turquoise and Caicos by Essie. I've never been much ... View Post
What I Ate Wednesday {RD Edition}
My RD/food blogger buddy, Carlene from Healthfully Ever After (whom I only wish I had half of her fashion sense and design skills), tagged me to participate in this "What I Ate Wednesday RD Edition". For some reason, what the dietitian is eating is of interest to my clients. I had an athlete ask me today...do you eat clean?? I'm like ummmm...as I think back at the cookie I munched on the day before. I explained I live by the 80/20 rule. I like to eat well most of the time, but I so leave room for little sweets. So here's a recap of my Monday eats. {all pics taken with iPhone} The day started out with a super early morning, 4:30 am wake up call. We didn't do CrossFit but I was pretty pumped about the day. First things first, coffee with a little half and half (not pictured, ... View Post
Pearl ran away
Before I start, Pearl is safe and sound at home now. Last night, Eric and I let her outside like we usually do before bed because we don't keep a litter box in the house. We don't usually have to keep a close eye on her anymore because she knows to come back in the house within minutes to sleep. Then we heard hissing... we ran outside and saw Pearl and the big nasty black cat at a stand off. That cat is ginormous and has been praying on her since we brought her home in December. Pearl was super scared and jumped the fence; a few minutes later we heard a loud kitty scream. There was a cat fight. After an hour and a half scoring the neighborhood for her, we became unsure if she was coming back. It was nearing midnight and still no signs of Pearl. I feared that she had been ... View Post
Stuffed Chicken Parmesan
So, I'm a little nervous about running 20 miles tomorrow morning. The Vermont City Marathon with CabotFit Team is only 23 days away so it adds little pressure! I took it easy in CrossFit this morning in an effort to not have a repeat of last weekend... for extra credit today we could do GHD sit ups, in which I would usually participate but I had to draw the line and set boundaries. Eric took the extra credit so let's all hope he doesn't experience what I went through. On a typical long run, we bring our card and stop at gas stations for hydration. But because we are going to be running while we are half asleep (and everyone else) we are planning on setting out frozen Gatorade bottles tonight along our run route. And I'm salting it up today! On to the recipe, this Stuffed Chicken ... View Post
How to write a food blog with a full-time job?
I'm all about a game plan. Eric is likely rolling his eyes right now if he's reading this blog because this often annoys him. Everything must have a plan... from the weekly menus, monthly budget, workout schedules, to how we'll spend our weekend. I'm not saying I don't like to be spontaneous, I just know that plans are the way I function to get stuff done. Since we've been married, he has sure taught me how to be calm and relax. I'm a work in progress, but at least there is progress. If you have followed this blog for a while you might have noticed that things have recently changed around here. Yes, there is a new look but I'm also trying to get more on a schedule with posting recipes. All 3 years that I have been blogging, I've worked full time so the blog hasn't been my BIGGEST ... High Protein Oatmeal
Sneezing, laughing, walking, sleeping, folding laundry.... you don't know how much you use your abs until you shred them. OMG I'm in pain y'all and every little thing hurts. Eric has been trying hard to make me laugh and it's killin' me. I did the full range GHD sit up at CrossFit on Friday. (What's a GHD sit up? Video here). I thought, of course I can do 75 sit ups, not a problem...I hardly feel sit ups when I do them anyways. But the GHD type of sit ups are no joke and will knock you down for days. Remember that Saturday AM Mobility and Mimosas at CrossFit? Yeah... that workout so didn't happen.... I ended up sleeping for 11 hours and woke up at 10am hardly able to roll over. I learned a valuable lesson from this WOD: Focus on YOUR goals. I really enjoy the challenge of CrossFit ... View Post
