Happy Friday friends! Any fun plans for the weekend? Eric and I are going for our first weekend WOD tomorrow morning. Our box does Mobility and Mimosas on Saturday morning. I'll post pics on Instagram. I really need some mobility before our 20 miler on Sunday. Yeah, after saying that you probably think I need some mimosas too ;). Right now my legs are tight!! Especially the hamstrings. My massage therapist recommended that I get this handheld massager to work the IT band/hamstrings in between sessions. I've been getting sore around the ankles too after long runs and it's kinda lingering, so I gotta get this healed because the Vermont City marathon with the Cabot Fit Team is one month away!! Excited and nervous. Also, I just want to say thanks for sticking with me and for putting up ... View Post
Bacon, Egg, and Gouda Breakfast Sandwich
This bacon, egg and gouda breakfast sandwich is inspired by something you would find at a popular coffee shop and features fluffy eggs, oooey gooey cheese and salty bacon. Bacon, Egg, and Gouda Breakfast sandwich is a perfectly savory breakfast meal prep for your busy weekday mornings! We are Starbucks regulars, and some might say coffee addicts... but I wouldn't go that far. This girl just likes a good cup of coffee in the morning. And lately after Crossfit we've been stopping in to get a little breakfast too...not every morning because that would for sure blow the budget. But some mornings it's like a little fun treat! I've grown to become addicted to the Bacon, Egg, and Gouda sandwich from Starbucks. OMG, those soft fluffy eggs, oooey gooey cheese and the saltiness from ... View Post
Chicken Fried Rice with Sweet Chili Sauce
Eric and I have been doing super good with our budget! I know we are only two weeks in, but seriously we usually would have blown it by now in the eating out category. We've averaged $30 bucks per week eating out (and you should know we put coffee in this category)! I'm kinda reluctant to share that we've been on it, because I don't want us to fall off this wagon of eating in during the week. We've really surprised ourselves that we're not tempted to dine out for some reason. I went to the grocery store to get "easy" stuff for lunch-- i.e. soup, bars, and snacks and we've been eating leftovers too. Another hurdle we addressed was to not set ourselves up to fail by menu planning elaborate and challenging meals during the week. This has really helped and quesadillas have been a weekly ... Belated Birthday Recap
Last Saturday was my birthday and I've been wanting to share all the fun details with you. It was an entire weekend of celebration which was really special and fun. The event packed weekend kinda rushed us into the week, and I cannot believe it's already Thursday! I'm just now getting a breather. On Friday night we went to a Mexican restaurant to spend time with Eric's sister, hubby, and little one and my brother. The next morning we got up and cleaned the house and headed out to Amelia Island, just north of Jacksonville about 3 hours from Orlando. This little sleepy beach town is one of our favorite go to spots because we enjoy the colonial feel with a quaint downtown area, New England style beaches and architecture, and the weather doesn't quite feel like Florida (hot and ... Brown Butter Banana Ice Cream with Nutella Swirl
Brown Butter Banana Ice Cream... say that three times fast! Omygosh y'all, I think I've found it--my absolute favorite ice cream combo. I'll confess, I've been on a major ice cream bender lately. I may or may not be making a batch of homemade ice cream every week. I promise it's in the name of honing in on my skills. That's not a problem with you, right? I've made "birthday" cake batter, double stuffed oreo, banana, and vanilla for my ice cream purest hubby. These ice creams begin with the same base recipe and then I add fun mix ins. Oh and when I want ice cream, it's like a let's hurry up and make this ice cream so we can eat some. Cooking the base to melt the sugar and letting it cool for hours is totally not my style, so hopefully you can appreciate my speedy ice cream ... View Post
