Spring has sprung! Can you believe it's the first day of spring? My goals for this weekend are to replant in my garden and get my Easter decorations up, and I'm going to savor every minute of it. We also have a 17 miler planned. I'll let you know how that goes on Monday. To celebrate this week of green, I'm sharing a green juice that I developed and photographed for Fitness Magazine. Scroll to the first page of the article and you can see my quotes as well. While it's not technically a juice because I used a blender to make it, it has juice consistency and a great dose of protein! ... View Post
Spinach & Ricotta Quiche Muffins
What’s for breakfast? While cereal and milk is a common breakfast staple. It’s not the best choice in my opinion. For lasting energy, your body needs more than sugar. In fact if you are trying to maintain lean muscle tissue (and who isn’t?), you need high quality proteins. Protein is so often overlooked at breakfast, and over-consumed at dinner. Spacing your protein intake out throughout the day is the best bet for sustained energy, maintaining a healthy weight, and feeling your best. For breakfast, balance fiber-rich carbohydrates (fruit or whole grains), high quality protein, and healthy fats. I know breakfast needs to be simple and fast, so I’ve put together my favorite weekday breakfast combos for you. EggsSpinach & Ricotta Quiche Muffins + ClementinesHard Boiled ... View Post
Almond Joy Cookies
Almond Joy Cookies that taste just like the candy bar! Chewy, sweet and almondy - YUM! Eric and I spent a lovely weekend with friends in Dothan, Alabama. We grew up with Brian and Rachel and it was really neat to visit them in their new city and get some good quality time with them. It was a really active and relaxing weekend that was low key and just how we like it. On Saturday morning we went to a HIIT workout class followed up by a chilly walk on a nature trail. The scenery was beautiful, and so different from what we are familiar with in Orlando. That night afternoon Rachel and I used my basic chocolate chip cookie recipe and made Almond Joy Cookies! I have to share that we prepared these the old fashioned way, creaming the butter and sugar by hand. Yep, great ... View Post
Garden Tea Party Themed Baby Shower
Pinterest is crazy. I hosted my first "real party" this past weekend, and can now understand what it takes to plan a party now that pinterest is in our lives. Gosh I'm so glad I got married pre-pinning.. that would have been real crazy. I had a vision of what I wanted to do... an outdoor garden tea party baby shower. I was shocked to see that so many people do tea parties for baby showers on pinterest and elements of what I wanted in my head was already executed and beautifully displayed on pinterest. I can't lie, it was super helpful in planning the shower because I'm very visual. Click here if you want to see my baby shower pin board.. it's no longer a "secret" anymore :)My dear friend Rachel is having a baby girl! Rachel and I met through a small group bible study at our church. ... View Post
Apple & Peanut Butter Smoothie
Apple and Peanut Butter Smoothie Start with Why by Simon Sinek has inspired my husband. Have you read it? I cannot wait to get started with this book. When he reads he keeps a log of his favorite quotes to look back and he shares some with me. Yesterday I wasn’t really feeling inspired for cooking, I didn’t know what I wanted to have for breakfast. I tried to make coconut pancakes but those were an epic fail. I cannot believe how crumbly coconut flour gets when cooked, but that’s for another post. One quote from the book that he repeats a lot is “People don’t buy what you do; they buy why you do it.” It’s like apples and peanut butter, they were made for each other and it’s the why that influenced my breakfast smoothie. Eric will put up a fight about drinking the green juice (not ... View Post
Pulled Chicken Avocado Sliders
Remember last week when I was complaining about my steps and being office bound and sedentary? Sitting sucks. Well this weekend we blew that out of the water (27,000 steps), and it’s getting me excited about the week ahead! On Saturday, I went into work with the Magic because they had practice. And when I got home my hubby was deep cleaning our house. He’s such a sweetie and ever since my cat allergies have been really great too! Thanks honey! That afternoon we did a little budgeting, meal planning, and grocery shopping.Sunday we got up I did some photography and took a long walk around the neighborhood, coffee in hand. It was a foggy morning and 70 degrees. I loved running into Victoria, RunningPeanut.com, who was out on her morning long run. After church, Eric and I set out for ... View Post
