Sweet Jalapeño Cheese Ball
Meet Pearl Magnolia LaRue. Better known as Lady Pearl, Miss Pearl, Pearl Girl, and Little One. This Christmas, Eric got a cat. He grew up with cats and just loves them. I grew up with dogs. I like cats, but when I’m around them I break out in hives, sneeze, get watery eyes, and they’ve even closed up and crusted over in the past after holding a cat. I know, gross…so despite their cuteness I’ve kept my distance. Plus why do they always have to scratch? Christmas day was hard for me allergy wise, but with each passing day my allergies are dissipating. In fact, I didn’t have to take allergy medicine the past two days! I’m starting to understand why people love cats. Pearl is all about purring, she loves bath time, snuggling, and digging in my garden, and best thing yet— she doesn’t ... View Post
Chocolate Peanut Butter Rocky Road Cookies
Merry Christmas Eve! I don't know about you, but I can't believe Christmas is tomorrow. This season has been weird this year. We put our tree up pretty late, I barely did any gift shopping, only picking up a few things here and there. But even with the rushed holiday, we did get together with neighbors and friends for Christmas parties, hosting a Christmas gathering at our house and I baked lots of festive cookies for friends. We sat by our glowing Christmas tree every morning for quite space and coffee. And today, I get the day off. This season I've been reminded about a lot of really cool things. Even during this busy time, God is teaching me about being still enough to listen and reflect. With the death of our pastor, I've been reminded even more this year why Christ came to this earth. ... Edamame, Cranberry, & Feta Salad
I could spend hours in Fresh Market. Fresh flowers, colorful produce, unique products, yummy coffee tastings, large bins of raw nuts, seeds, and dried fruit, and the most scrumptious sushi eva. I find very cool ideas about food combinations and flavors just browsing the store. Fresh, simple ingredients make a big statement. When cooking with quality ingredients the flavor cannot be topped. This recipe was totally inspired from a simple edamame salad in Fresh Market. It seemed just too easy to purchase the ready prepared salad, and I knew it would be more fun and rewarding to recreate it myself. Edamame Cranberry Feta Salad inspired by Fresh Market! Visually this salad is appealing and perfect for a Christmas party. I love how the sweet tart cranberries contrast the salty bites of ... View Post
Cranberry & Kale Turkey Burgers
I've been hoarding this recipe since Thanksgiving. I promise my intentions are good though. Since I've been hit or miss the past couple months on the blog, I thought I'd fill you in a little bit with what has been going on in my life....My first cookbook was published, Flat Belly Cookbook for Dummies! Eric and I did a the OUC half marathon. It was a super HOT race, but a great experience running a half in our hometown. It's been a rough time at our church as our former paster died last week.. and through this I've been reminded that God doesn't always answer prayer. That His time table is different from ours. Isaiah 55:8-9 "For my thoughts are not your thoughts, and neither are you're ways my ways, declares the Lord. As the heavens are higher than the earth, so are my ways ... View Post
I’m thankful for my Auburn family!
The rivalry between Auburn and Alabama is somethin' fierce. I was born, raised, and married into an Auburn fam, and was is Eric. The blood runs thick in our family. The winner of the Iron Bowl get bragging rights for a whole year, but after this year's Iron Bowl showing, I'm sure we'll be sharing stories of this game will be passed down to generations to come. It's so "great to be an Auburn Tiger'! Every other year the Iron Bowl is in Auburn and my family makes the trek up in the RV to Alabama for Thanksgiving. We celebrate with my whole fam up there, spend time on the lake at my aunt's house which is 30 minutes from Auburn, and tailgate in Auburn on game day. Gosh I love spending time with the family up there, being in the South, and reuniting with college friends. Eric and I ... View Post
