It's been way too long. I hate that I haven't been here since Halloween and it's almost Thanksgiving. Where did this fall go? I've been traveling the past 6 weeks and started a new job… same amazing boss, but now my days are mostly spent with the Orlando Magic, helping the players with their nutrition. Many celebs have popularized detoxification diets as a means of weight loss and cleansing the body. But where is the science in all of this? Well, today I'm going to separate the science from the hysteria. Detoxification is a natural body process where the liver and gut play a major role. Many of you know I got married the weekend after graduating from Auburn University and started my dietetic internship that summer of 2010. We were blessed with lots of gifts including a fully stocked kitchen, but I really had no idea how to use these kitchen tools to prepare and cook a meal. I started watching the food network, learned some basic cooking skills and begin to cook meals at home for the two of us. I found new recipes on the internet and in cookbooks too. It's been a really crazy month of travel and it's not winding down for a few more weeks. I'm so craving our slow Saturdays of morning coffee, Farmer's markets, and a stroll on the Ave. Those weekends are so so precious to me, and I sure do miss them, especially when I'm away from Eric. This weekend I'm in Houston for the Food & Nutrition Conference and Expo. Pumpkin Mac and Cheese
Anytime I'm brainstorming a new recipe, I call my mom. She is an awesome cook and filled with creative ideas. She has lots of delicious recipes and is pretty famous for her macaroni and cheese. If it doesn't make an appearance at a tailgate or family party she is questioned. So I called her the other day to get her secrets... can you believe she adds a whole stick of butter and Velveeta to her mac & cheese?! Breakfast Flatbread Pizza
Last Sunday, Eric and I had breakfast at 903 Mills Market, a very quaint local restaurant in the neighborhood where we use to live. When I dine out I always ask the person taking my order their favorite item on the menu. I like to hear what others enjoy, and it's usually is a winner of a choice. Eric gets jealous when this happens because my food tastes better than his. I had pizza for breakfast, and I'm not talking the cold pizza leftovers! Their breakfast pizza rocked my socks and I was wearing sandals! It totally inspired me to create my own at home. Duh!
