I've never made stuffed shells before last weekend. Stuffing shells requires more love and patience than I realized and it brought back a deeper love and enjoyment of cooking. Most of my recipes are really simple. I often don't feel as if I have the time to prepare something elaborate. But stuffing shells required me to slow down and just cook. Gently boiling the noodles, forming the stuffing, stuffing them individually, nestling them in their little bed of sauce, and watching them line up one by one. It made me realize how I need to continue to challenge myself with new recipes, to continue to grow and learn new skills, to take time for myself, and to savor the process. I promised you I would have a recipe for you to use the kale pesto today, so here you go! These Chicken Pesto ... View Post
Kale Pesto
There are so many ways to make pesto. It's a mixture of herbs, garlic, nuts, parmesan, and olive oil. Traditional pesto is made with basil, pine nuts, parmesan cheese, and olive oil. But the unique combinations can be left up to your imagination. Pesto can be spread on warm garlic bread, into a panini, stuffed into meatballs, or mixed into a pasta. I had some kale in the fridge that needed to be put to use, so I decided to blend it up into a pesto. Just so you know, this recipe is a precursor for a recipe coming on Friday. But it deserved it's own recipe. So get out the food processor and go make this pesto to gear up for a delicious weekend! Apple Pie Quinoa Breakfast Bowl
This Apple Pie Quinoa Breakfast Bowl will make your fall weather loving life. It's spicy and topped with shredded apples, FTW. I live in Florida, which means fall is fleeting. But the moment I can feel even the slightest change in the air, I get so excited to dive into my favorite fall flavors and autumn-inspired recipes (like all things pumpkin spice). One of the most versatile and delicious ingredients is the apple. I can't get enough! They are so tart and crisp and sweet. I love the many different varieties of apples and how they are so versatile in how they can be prepared. A little cheese and apples for snack, pressed into a quesadilla or shredded on top of oatmeal. We have even roasted them with Brussels sprouts. So yummy! When I meet with people to talk about their nutrition, ... View Post
Oven “Fried” Okra
The last of summer is upon us, and you know I'm ready for fall. But I saw the most beautiful okra at the Farmer's Market a few weekends ago. It was pretty early in the morning and we were still planning on walking around a bit so I marveled at their green beauty and said I would come back later. What do you know… when we got back around to the stand, they were gone! I vowed I'd be there first thing the following weekend to scoop some up. And so I did.I needed an okra fix, extra crispy please. I've grown up eating okra, fried of course. What do you expect I was raised in the "South".Florida isn't the deep south, but the town I grew up was without a doubt country. When I say country, I mean "cuuun-tree", you've gotta hold the vowels. Well, my mom was raised in Alabama so I guess that makes me ... View Post

As soon as September rolls around I'm one of those that has the fall mantel completed and the pumpkin candles burning throughout the house. So to cool off while getting ready for the season, I blended up this. orange. creamy. goodness. Pumpkin Spice Frappuccino. It's the perfect balance of sweet pumpkin and coffee. Shhh, don't tell Starbucks. I've added pumpkin to smoothies in the past and have ... View Post
