Quinoa Taco Salad
As I was eating dinner last night, I realized I've eaten a Mexican-style salad my last three meals aside from the pancakes I had for breakfast. Mexican food is just so good and comforting. And it's really simple after a long day, especially on a weeknight. From the recipes on this blog you know I love to cook, bake, and eat healthy most of the time. But let's be honest and real, I don't have the time to be in kitchen cooking and cleaning every night of the week. For the most part, Eric and I are night time exercisers. Sometimes we will get in a morning sweat sesh, but more often then not we workout at night, which means dinner needs to be fast! Quick and simple food is a must, this Quinoa Taco Salad fills that need and has a wonderful flavor. Love those mangos! FYI-- I'm blogging over ... View Post

Grilled BBQ Chicken Breasts
The heat is on this summer, and I love to be outdoors. If there is one thing that reminds me of summer time besides enjoying the sun and going on the water, it's grilling! I love the simplicity, convenience, and unique flavor of grilling foods. The best part is it usually attracts friends and family to come over. Grilling BBQ chicken is not much of a "recipe" per sey, especially for those seasoned grillers out there. But I have many people ask "what's the best way to cook chicken", and I can remember the time when I was asking this same question. So I wanted to do a blog post on this to share with you that grilling chicken doesn't have to be scary or difficult. How To Grill BBQ Chicken Breasts1. Pre-heat. Mango Arugula Salad with Creamy Rosemary Dressing
I can't get enough mango this time of year. Do you agree? When I cut into a juicy mango my mouth begins watering and I start to wiggle. It's the happy dance I do when I know I'm about to eat fresh mango. Tthe best part of the mango is the gnawing on the seed. So good! Salads make such an easy lunch for me, and they can be so satisfying and simple to pack for work. When I get on a salad kick, I'll eat them almost every day for lunch. I created this salad recipe for my friend's blog. Would love if you'd check it out!
