I'm not too much of a foodie dietitian to share that you may occasionally find a PB&J in my lunch box. It's not complicated and we almost always have the ingredients on hand. PB&J makes a simple lunch or snack when you're crunched for time. The PB&J is one that I recommend often to my athletes too. It's convenient to pack in a gym bag or backpack and munch on in between classes or before/after a workout for extra energy. With athletes in mind, I created this PB&J Smoothie for Cabot Creamery. It's packed with nutrition from the Greek yogurt, milk, strawberries and peanut butter! A yummy childhood favorite filled with protein and carbohydrates makes a delicious recovery drink post workout. Research shows that dairy proteins (casein and whey) can actually help to stimulate ... View Post
Sports Massage for Injury Prevention and Healing
Being active is a big part of my life.. it always has been. I grew up playing competitive tennis and while I didn't particularly like tournaments, I loved the workouts and how I felt after doing drills: strong and empowered. When I went to college I wanted to step away from tennis because it was emotionally draining for me so I started running and found triathlon. From my first race, I fell in love with endurance sports; remarkably the encouraging people that I encountered on the course. In three years, I completed nearly 20 triathlons and loved every single minute of it. After the wedding, without a free pool and my core friends to bike and travel to races with, compounded by the lack of funds... no more parents paying for monthly races and travel, funny how that works. I moved to ... View Post
Chicken Pasta Salad with Herbed Buttermilk Dressing
I hope you enjoyed the first weekend of summer. We sure did with a trip to the beach, but more on that in my next post. Since summer is the season of picnics, backyard BBQs, and fun in the sun, I couldn't wait to share with you my latest picnic-inspired recipe. Most summer spreads include a pasta salad, and all too often heavy and laden with fat. I reinvented the traditional and lightened it up a bit by adding lots of veggies, grilled chicken, and a zesty buttermilk dressing. With the contrast of the dried tart cherries, savory chicken, and herb-alicious dressing, you're in for a treat! This pasta makes a yummy lunchbox meal too. I made a big batch of this yesterday and packed it in airtight containers for us to eat this week. What is your favorite summer side?Chicken Pasta Salad ... View Post
Cherry Almond Steel Cut Oats made in the Slow Cooker
I love the nutty and chewy texture of steel cut oats, just not how long it takes to cook. I don't know about you, but I don't have 30 minutes to stand in the kitchen stirring my oats in the morning. But tossing them in the slow cooker and letting it cook while I'm getting my beauty rest makes perfect sense to me! It feels so good waking up to a warm breakfast in the morning. These Cherry Almond Steel Cut Oats are so yummy, especially when cherries are so fresh and juicy like you can find them in the supermarket right now! I love to make this recipe on the weekend and store the oats in ball jars for grab and go breakfast during the week! Easy as {cherry} pie. ... View Post
Honey & Orange Coffee Cake
The honey in this recipe compliments the orange and ginger flavors in the coffee cake and can also mask the bitterness of gluten-free flours! Gluten Free Honey Orange Coffee cake. I LOVE a good coffee cake, scone, biscotti or really anything that pairs well with coffee.. don't you? Of course with my recent diet changes and eating gluten-free, I've had to be a little more choosy at the coffee shop, and go solo with my iced coffee or latte. Lately I've had a hankering for a good coffee cake, so I decided to get a little creative in the kitchen with gluten-free flours; combining brown rice with garbanzo & fava bean flour and this honey orange gluten free coffee cake was born! I used honey in this recipe because not only does it compliment the orange and ginger flavors in the coffee ... View Post
Salmon Nuggets
Tired of the whining when trying to get your kiddos, hubby, or [insert fish-hater in your life] to eat their salmon? Well fret, no more because I've got you covered with...Salmon Nuggets.Oh My Goodness! These little fish bites are so so delicious. I'm a salmon fan, but I honestly believe even those that swear off salmon will like salmon nuggets! They are crunchy, moist, and not the slightest bit fishy tasting! And everything's better dipped in ketchup, right? (Well, according to my hubs..)Salmon is a great source of the omega 3s, EPA and DHA. This is different from the type of omega 3, ALA, found in walnuts, chia seeds, and canola oil. ALA has to be converted to DHA to be used by the body. And while I'm a fan of chia seeds, if we ONLY rely on them for omega 3s we will fall deficient.EPA ... View Post
