Why I had to change my diet
I mentioned on Friday that I've recently had to change up my diet. For the past 4 years, I've struggled with tummy troubles which made me feel really nauseous, especially at night. A few times I've found myself doubled over in pain and thought Eric was going to have to take me to the hospital. I was never able to pinpoint a particular food that was making me sick. I thought I had issues with dairy, but I now see that it's what I was eating with the dairy that was making me sick… I had food sensitivity testing done which showed that I was reactive to lots of foods that I would eat often. Most notably canola oil, gluten grains, and yeast. In fact it's quite possible that I ate these three foods multiple times a day.The results showed that I'm reactive to other foods, but the one's ... Petite Lasagnas: Savory Bites Cookbook
A few weeks ago when we were setting up for a Cinco de Mayo segment at Fox, I met the SWEETest girl, Hollis Wilder. She was there with her new cookbook, Savory Bites, and of course cupcakes! [In case you didn't know Hollis is a 3X winner of Cupcake Wars and owner of the famous cupcake shop Sweet! By Good Golly Miss Holly] In her new cookbook she shows us that the cupcake tin is not just for sweets, and it makes the most delicious savory bites. Hollis explains that with the meals in the cupcake tin it's all about the size, so you don't over do it! Who doesn't LOVE minis?! She kindly gave me one of her cookbooks and said I could share a sneak peak with you all, so here's a little dish from her book. Hope you enjoy the recipe as much as we did!! Thank you Hollis!Classic ... View Post
Skinny Pina Colada
This weekend has been calm. We have been so busy at work lately that rest and rejuvenation is what we were craving. Nothing that we had to do, except be together which was much needed after spending our 3 year anniversary in separate cities. Memorial Day morning will be spent on the lake canoeing in Winter Park and then to off to my parents house for "southern cooking" as my dad describes it. It's going to be a HOT day here tomorrow and when the temp rises in the summer we LOVE a good pina colada. But after drinking one I'm often on a sugar high and feel a little icky. So I created a Skinny Pina Colada full of flavor that you can feel good about sipping! I hope you have a lovely Memorial Day. And if you need a few things to cook tomorrow, check out some of my festive ... View Post
Happy Anny from St. Louis!
This morning started out with a beautiful sunrise run with new friends from the CPSDA conference (Collegiate and Professional Sports Dietitians Association). I've been having a lot of fun meeting sports RDs and listening to presentations on fueling for performance. But most importantly today is our anniversary! I cannot believe we have been married 3 years already. I remember our wedding day like it was yesterday, living in our little garage apartment, running our first marathon together in Savannah, and this past year Eric finishing law school, passing the BAR, and beginning his career, and finally moving into a house!! It's been an amazing time together and I'm praying that I can savor the future memories we make ... View Post
Florida Hospital Gourmet Soiree
Disclosure: Florida Hospital invited us to the event free of charge, and I was not compensated to write this post. I am a past employee and intern at Florida Hospital. My opinions are my own. If you follow me on Instagram or Twitter you may have seen my posts from last night's event! Eric and I had the opportunity to attend Florida Hospital's Gourmet Soiree. We had such a fantastic time! The Gourmet Soiree, concept was a cook at your table with a local chef with ingredients provided by Whole Foods ... View Post
