We like to have pizza on Friday night. There's something about warm bread and melted cheese at the end of a long week.Last week I made this kale salad. Eric came home and I was chopping up the kale, and of course I received a stare and doubting remarks. Some of my favorite memories of traveling as a family growing up were in the Virgin Islands. When I graduated eighth grade my parents took me on a vacation, just me and them.They let each of us pick where we wanted to travel in the continental U.S. during the summer before high school. I chose the Virgin Islands.When had an amazing time visiting The Baths, going on boat tours, snorkeling, and sitting on the beach as they served us drinks.This was one of my favorite drinks, virgin of course. Mystery Reveal {Coffee Brownies}
May I apologize? You all have been waiting so patiently to find out what I've been up to in the kitchen, well except my best friend and dear mother who just had to know before the reveal. I posted this teaser on Facebook the other day. Can you guess what the mystery ingredient is?? Black Beans. Let's say better left a mystery for Eric, he came home as I was mixing these up and he spotted the empty bean can on the counter. He couldn't get over the black beans and chocolate duo, it's not like I'm asking him to have kale for breakfast. So with a recipe like this the best taste testers are co-workers. Lasagna Pie
Eric has been getting off later in the evening and by the time he is home we are both pretty hungry which has been interfering with our workouts. Who wants to run when they are ready for dinner? So we both snacked before, and laced up our shoes.I went ahead and prepared dinner for tonight before he got home from work, so there wouldn't be any excused to skip our workout.It's been storming and lightening almost daily; we'll have blue skies at the start of the run and lightening at the end which scares the beejeebees out of me... so needless to say I picked up the pace on the way home.During our cool down, dinner baked in the oven!
