A few weeks ago, the husband was munching on a "prepackaged" breakfast cookie, and texted me, "Can we try to make our own breakfast cookie?". On a side note...I just love when he speaks in "us" form cause we know who's doing the baking. But oh the sheer happiness this gave me. He has come to appreciate REAL food. So I got into the kitchen today and whipped up this breakfast cookie inspired by pumpkin oatmeal, a breakfast favorite around our house.Goodbye garbage cookie; Hello homemade! These cookies make a yummy and nutritious grab-n-go breakfast or snack.Pumpkin Oatmeal Breakfast Cookiesmakes 12 cookiesINGREDIENTS1/4 cup canned pumpkin puree2 bananas2 tablespoons pure maple syrup2 cups rolled oats, divided1/4 cup chopped nuts1/2 teaspoon cinnamon1/2 teaspoon pumpkin pie ... Beer-Roasted Potato Salad with Brussels and Bacon
Not your typical soggy potato salad. Gotta say, I've never been a real big potato salad fan. But in truth, I'm not a boiled potato fan either..maybe that's why I don't typically like the American-style potato salad that makes an appearance at the barbecue. Roasting is a different story. Almost any veggie roasted tastes better in my book. So I decided to reinvent the potato salad by roasting it. Potatoes are good for you if they are prepared the right way. They are a great source of fiber, potassium, and vitamin C. Yes, they are high in carbohydrates, but the good kind cause they contain resistant starch which may have additional health benefits. Green Monster Juice
Last week at work we taught a nutrition class at a kids day camp.. 250 kids, ages 6-13. Something interactive and fun needed to go down to keep their attention! So we played with food. The kids were blindfolded and then challenged with a food. Kale. They tasted it and made yucky faces; then had to judge the food to get points for their team. It was a blast, but the best part? Smiles and giggles when they drank the Green Monster Juice! One little boy said he loved it so much he was going to ask his mom to make it for dinner. Recipe tested and kid approved. Serve it up for your little (or big) kids. ... View Post

It's been a relaxing weekend at our house. Saturday I spent time writing at a coffee shop and then met up with family and friends in the afternoon. It's been raining since we woke up, but that hasn't kept us inside. Eric and I enjoyed breakfast and scripture reading together then went on a long walk around the neighborhood, coffee in hand, and light drizzle outside. It was magical, the birds were really active and seemed to really be excited about the weather, too.He went off to the library and I got to take a longer run in the rain, visit our new nephew, and then to the grocery store. Here's what we are eating this week. Sunday: Spanish WrapsMonday: Black-Eyed Pea NachosTuesday: Baked Salmon w/ Quinoa SaladWednesday: Falafel Pitas Thursday: Roasted Shrimp w/ Veggie ... View Post
