Gluten-Free Crispy Cauliflower
Did you know cauliflower is packed with nutrition? Yeah, shocking I know. It's easy to be fooled by its lack of color. At our house we are trying to include new foods into our meals. Foods we don't always pick up at the grocery store, to get more balance and variety, to have more fun... to find new recipes. Cauliflower contains potent antioxidants that reduce inflammation making it an excellent disease-fighter. One cup has a full dose of the daily value for vitamin C, and it's a good source of fiber and folate. Couldn't keep my hands off these golden nuggets. Salty. Crunchy. Warm. Fresh. Light. Zesty. They would make a terrific party appetizer or weeknight sides that's a little less than ordinary. ... View Post
Meal Plan Sunday
It's been a workin' weekend. Eric is of course studying like a mad man, and listening to classical music, loudly, and I've been running around, writing, laundry, gifting, traveling, church, shopping, among other things. Friday night my bros DJ and Ondrej came over and hung out with me.We hit up a local favorite, Prato on Park Ave, and then walked down to The Wine Room for drinks and good conversation. We ended the night at Yogurtland, only the best fro-yo.Ummm... clearly amazing caesar salad, so light and lemony! Must get at Prato. We got an assortment of fresh and unique pizzas straight out of the brick oven. I'm headed back to my parents house tomorrow for Memorial Day celebrations. Dad will be grilling and mom has some yummy baking planned. I'm going to go... enjoy.I sat ... View Post

Next process the nuts with the garlic. Using the shredder attachment, add the cheese. Slowly add basil and olive oil until desired creaminess is reached and pesto has smooth ... View Post
Kale Crostini
Recipe Redux has stretched my culinary imagination and challenged my taste buds. This month’s recipe challenge was to incorporate “little fishes” to “sea what we’ve been missing”. To tell you the truth, I know I need to eat more seafood; we try hard to incorporate it into our meals twice a week, but sardines and anchovies were not in my game plan.It really grossed me out purchasing sardines, but I was willing to give it a try. After all, I tell my “kids” daily... challenging foods can take 15-20 attempts before it becomes tasty.Knowing the health benefits of foods can help with that initial trial period. As I purchased, experimented, and tasted the sardines, I reminded myself over and over of the sardine’s omega-3 power! (Two sardines have 6 grams of protein, 355 mg omega-3, and ... View Post
