Over here, we're all about simple, quick, and nutritious.On the weekends (if I'm lucky), I prep beans. Yeah, it's cheap and really tasty. Simply soak the dried beans over night, then the next day drain the water and cook for 1.5 hours. It's easy for me, I'm usually around the house anyway. During the week we pop them on salads, pastas, or wraps. Smash and smear white beans and avocado on a tortilla, then pile on the lettuce and top with cheese. Roll it up! Easy-peasy. Seriously good. Biscotti has been on my to-make list for a while now, so when I found out the topic for this month's Recipe Redux post was chocolate, I knew just what I was going to make. These little cookies surprised everyone. My family wasn't too keen on crunchy cookies, but after they tried them they took half the batch. I was happy to see that they went over well. We live in a small garage apartment, and the grounds around us are very lush, and provide a little too much shade for my herbs. Last summer snails were chomping up the basil leaves, so the herbs were moved to the balcony which I've found gets more sunlight. Last weekend, I went to gather some new plants with a friend. Easy Crockpot Nachos Serious. Deliciousness. Mexican Night. This recipe was out of the park good with my husband, and for sure scored some points in my book because I practically did nothing...and it was awesome. What is easier than throwing some ingredients (that only require using a can opener) into a pot, and leaving for work? Fix-it and forget-it. My kind of weeknight meal. I'm always looking for ways to cut corners during our work weeks. Whew. PS. I didn't use all the chicken on our nachos, there was a lot of leftovers, so I made up a pot of brown rice, and took it for work the next day.
