Yesterday, I took a day off. Well, my work schedule has been adjusted to include a day off ;). I am so thrilled with the space that this day brings.Lately, I have been feeling quite overwhelmed with working a 40-hour week at my day job. I love what I do, but I also enjoy keeping my hands in other things too. Eric and I have been talking and praying about me cutting back one day, so that I can do things like blogging, reading, house-keeping, crafting (hopefully one day I will find space for you again). I miss the little things.If you didn't know, I work for a grant funded program. This year the grant did not have the funds in the budget for two dietitians to work full-time, so we are now working 4 days a week. I felt so blessed, and relieved, when I heard this news. Warm Breakfast Salad
I've had people ask me lately about ideas on how to get more veggies at breakfast. I love making an omelet and stuffing it with spinach, peppers, mushrooms, and cheese. But if you know me, I am always looking for ways to get creative in the kitchen to keep it interesting.Soooo.. Today I went with a breakfast salad. AND WHOAH was good! Buds on the RUN
Eric and I did not wake up for our AM run.. I didn’t even hear the alarm clock. It’s been real hard for us lately to get moving in the morning. In the beginning of the week we get up at a decent time, do a little breakfast, run or lift weights together, and get some nice quiet time...but getting close to the weekend it gets tough. Eric started his last semester of law school this week, guess the night classes are catching up with us already. So plans changed, and I decided to go for a run after work. Why I run…
There are many reasons why I run, and I thought I’d share them with you.Space. Running gives me space to think. When I started running, I used an ipod to listen to music. I think it began as a distraction technique so I wouldn’t feel the “pain” as much. I then got into training for triathlons, and realized that an ipod would not work during a race so I started flying solo, and haven’t looked back. Now I listen to the birds, connect with the space around me, and think about things... sometimes I find myself blogging while jogging ;)The High. Lucky Cowboy Caviar
Lucky Cowboy Caviar is an old family favorite classic 3 bean dip filled with black eyed peas, pinto beans, black beans. When throwing a party I like to serve this Lucky Cowboy Caviar because it's a healthier snacking option and filled with fiber and protein keeping us fuller for longer. Beans and peas are also a rich source of potassium, folate, and iron-- and we all need more of those nutrients. We often serve this on New Years Eve to wish our guests a lucky year ahead. 10- Layer Salad
Afterwork/pre-run snack included juicy cherries + half toasted whole wheat english muffin + biscoff spread.. yummie munchies.By no means is biscoff butter a health food. It looks a lot like peanut butter, but don't let it fool you.. it's weak in the protein department....but it's a sweet dessert-y spread (made from cookies) that makes a fun change up.We did separate runs today cause E got home from work after dark, and I wanted to be out in the sunshine. Tonight's dinner was simple. There wasn't too much time after running anyway since we had to brave the mall for returns.This salad is super!
