Savannah 26.2 Recap

Isaiah 40:31Eric and I left Orlando at 10:00 pm on Wednesday night and headed to Savannah with my parents for the marathon. My dad drove the RV up, so we pulled over at a rest stop in Jacksonville to get a little sleep and finished the drive in the morning. We got to Savannah around 8:00 the next morning, so we had a full two days of kicking it around town before the big run. The weather was so wonderful; just perfect for being outside and exploring a new town. Pumpkin Mash
This fresh and cinnamony pumpkin mash is warm and creamy and made with real pumpkin (not canned!). Yummy-Yummy-Yummy. Just took my last bite of fresh and cinnamony pumpkin mash. It's warm and creamy yet it has some fleshy pulp since it was made with a real live pumpkin (didn't use the canned stuff this time). Cooking with fresh pumpkins adds a rustic taste. I spiced it up and added some subtle sweetness but this little baby is savory too. Tonight it was a side dish garnished with marshmallows and coconut flakes, but I'm thinking about adding some of the smashed pumpkin as a topping to my oats in the morning too. ... View Post

We got back from a "long" weekend in Auburn late Sunday night. The trip went pretty quick, with all the driving, sightseeing, tailgating, and visiting with AUsome friends. I think the slowest part of the weekend was the football game. Sorry boys... but sure glad we got the W over the Gators!Obviously I was not able to fit in all of my weekend rituals...the grocery store trip didn't happen until Monday night after work. Roasted Sweets
Roasting is one of my favorite ways to eat vegetables! SOOO good and easy. Apparently Eric loves it too. It's fantastic to come home to this...Slice sweets, russets, and yellow onions with an even dice. Toss lightly in a little EVOO, and arrange on baking sheet.Add fresh herbs..we through in some thyme and ground pepper. Roast at 450 degrees for about 30 minutes. Give the veggies a shake and a stir at about 15 mins, and return to oven to finish crisping.Sprinkle gently with course grain salt. Chomp. Chomp..I love to make extra veggies to enjoy all week. ... joyful strides
Whew. 20 miles down, and it feels amazing. Savannah is just around the corner. I cannot believe we only have 5 long runs left on our training schedule which began back at the end of May. I have to say, last year I only trained up to 18 miles and this just doesn't cut it on race day..lesson learned. So this benchmark was a big one for me....the longest run I've put in since last December! Our training game plan has been altered a bit, we've missed a long run or two to say the least. But hey, it's life. I love that about marathon training. It's not going to be perfect, but you get better at it as you go.
