If you haven't noticed, I'm a little pumpkin-licious this time of year. Did you hear about the pumpkin shortage? Maybe they should check my pantry! HA. No but really, if you see a pumpkin you better grab it... there might not be any left. Pumpkin is worth way more than the traditional pumpkin loaf or pie, although delicious--let's spice it up a bit. Have you tried pumpkin soup, stirred in oatmeal, or simply roasted in the oven? It's loaded with skin and eye loving beta-carotene and to me it's the taste of fall.So I put pumpkin to the test and turned it into a dip. Morning started off with a trip to the farmer's market. This is the bounty we brought back. Yes.. look at all those beautiful MUMS!!---one of my favorite things about fall!! Homemade Chicken Noodle
This chicken noodle soup is just what the docta ordered. Eric and I are still trying to fight off this nasty cold, so chicken noodle soup is what we were both asking for. The warmth of the soup felt oh so good on the throat and the broth helped to rehydrate. Not gonna lie, best chicken noodle soup I've ever tasted. Nothing beats the homemade stuff. Homemade Chicken Noodle makes 8-10 bowls 4 carrots, chopped 1 medium onion, chopped 3 celery stalks, chopped 1 lb chicken breast 1/2 bag of egg noodles 2- 32oz reduced sodium chicken broth 1-2 cups water 3 sprigs of thyme a handful of chopped parsley freshly ground pepper to taste Combine all ingredients in large stock pot and bring to a boil. Pesto Meatballs
Last night for dinner we had spaghetti topped with pesto meatballs and marinara. These meatballs were so tasty. I heart basil! Pesto is a great way to use your ever-growing basil plant before the fall temps arrive.The best thing about this recipe for us is: LEFTOVERS!I packed them for lunch today. Lately our schedules have been pretty jammed packed. I strongly dislike using the word "busy" to describe life because to me it sounds whiny. I mean we all have things to do that keeps us going, and sometimes we are simply more booked than usual. We are both working full time, E is taking night classes, and I am working at night too so this has somewhat interfered with the usual schedule--especially meal time. Some days we have to have breakfast, lunch, dinner, and snacks packed before leaving for work in the morning. This has been an adjustment for us..and meal planning has become a good friend of mine! Black Bean Soup
We are dreaming of cooler temperatures here in the sunshine state. I am so excited about this weekend as it marks the first of fall in our home: football season. Then comes fall decor, potted mums on the doorsteps, yummy spiced scents reminiscent of the holidays, and of course all things pumpkin! Like I said, I am beyond giddy about fall approaching!
