It's so hot outside this weekend which means it's fro-yo time in our house. I love making frozen yogurt at home because it's super simple, and I know what is in it. This recipe actually makes a pretty healthy treat--loaded with protein and antioxidants. These were the only ingredients I used..and let me tell you, it makes a delicious combo for a frozen snack. The strawberries were bursting with juices. Pulverize them in the blender.Mix all ingredients together.Pour into ice cream maker until it's almost frozen, and resembles soft serve.Freeze a little more in the freezer. a fun little Saturday…
This morning started out with a bowl of oats, topped with 1/2 plum, coconut, dried cranberries, walnuts, and a spoonful of peanut butter. Then we rented a canoe, and paddled around the lakes in Winter Park. It was such a beautiful morning...we had a blast! Oiled in sunscreen and squinty-eyed in need of some sunglasses. Entering the shaded canal. I want to do this so bad--our next venture: Paddle Board Orlando. We got out of the sun for a bit and enjoyed a nice lunch at home. Hummus, spinach, shredded carrots, tomato, fresh basil, and swiss on a crusty nutty bread from Whole Foods. Then we made our first trip to Blue Bird Bake Shop for some dessert. It is the cutest little cupcake place, and they have adorable bird ... View Post
Fueling for the long run.
Fueling for a long run is a necessary part of marathon training. It only takes a little preparation, but it definitely pays off and keeps you safe. We had 18 miles on the schedule this week. Eric and I got up early this morning; had some water with 1/2 a bagel topped with a fried egg. My go to food before a race or training run would be bagels and peanut butter, but I just cannot stomach peanut butter before early morning runs anymore, oh well. On to the incredible egg. We packed the mini cooler with 3 waters and 2 gatorades, and headed to shady Winter Park to get in the mileage. We stopped at miles 4, 10, and 15 to get some water and gatorade. At mile 4 I decided to carry gatorade with me on the run. I could feel a difference in my energy levels this week, so I believe my next ... View Post
Wheat Berry & Lemon Muffins
So Anne, I am finally getting around to posting the product review for Attune Foods. Thanks so much for sending the coupons. We picked up a box of Uncle Sam's Original. It has whole wheat berry flakes & flax netting 10 grams fiber and a good bit of protein (7grams) per 3/4 cup serving. I was surprised that it only has 1 gram of sugar too! Today we had a lunch date in the park, I packed the picnic basket and we enjoyed our lunch by the lake. I made a green salad with grapefruit, feta, and a sprinkle of the wheat berry flakes which added a nice crunch. (Camera died...no photos). When I got back to the house, I decided to make some wheat berry muffins. Eric and I are always looking for a quick breakfast or snack, and these muffins will do the ... View Post
Sweet Hubby Cooks Dinner
We went on a cool evening run tonight. Our legs were somewhat sluggish from our sweaty 16 this weekend, but we got in a good 3 miles. Tonight's jog around town was refreshing, the breeze hit our skin giving us little reminders of fall. Oh I cannot wait for fall weather to get here. The pumpkin spice candle is already burning in our house, and it smells soooo yummmy. After the run, I did some minimal stretching and showered off. Then look at what I found... My fabulous husband cooked us up a warm dinner tonight. Sweet Home Orlando
The Friday morning alarm beeped at 3:00, and we packed the car and headed to aunt Elaine’s lake house near Auburn, AL. Not too long into the drive we made a pit stop for coffee and bfast. Mmmm, nothing like a good latte on a road trip. Shortly after we made it to the lake, we chopped up a fresh herby salad and visited on the deck overlooking the water. The weather was overcast and breezy, a nice break from the Florida heat for sure. While Eric took a late afternoon nap, aunt Elaine and I went outside to pick figs from her lemon fig tree. I had never tasted a fig before--they were very sweet with a soft texture. She gave me a few good fig recipes that I’m excited to try. Aubie likes figs too. Look what ... View Post
