We told ourselves last week, that we were going to try to give a better effort to getting our workouts in on the days they are scheduled instead of playing catch-up. In particular Sunday's long run and Tuesday's track. Those beginning of the week runs set the tone for the rest of the workouts, and we have found that if we don't start off right, it shifts up all of our workouts and creates more fuss. So today was makeup Monday--we had a tired husband Sunday morning, someone stayed up too late watching movies, maybe? ;). It's alright though, we don't get too worked up about it,--life goes on, and we reschedule. He needed his rest, and we both enjoyed our lazier Sunday. But man, Monday is tough. It was extremely humid today, the air was heavy on us and we're planning for 10 miles, but I ... View Post
Homemade Pizza Dough
Pizza night is a hit around here! We usually have friends over to share in the pizza making fun. Everyone brings their favorite ingredient, and we end up with some one of a kind pies! What makes the pizza so delicious is homemade dough. It only takes a few minutes to whip up the dough at home, and it will save money too!Making pizza dough at home is so simple, you only need 4 ingredients--flour, yeast, water, and salt! It makes a crispy crust on the outside and is soft on the inside.Homemade Pizza Dough(Makes 4 1-lb loaves)3 cups warm water (100 degrees F)1 1/2 tablespoons active dry yeast 1 1/2 tablespoons course kosher or sea salt6 1/2 cups all purpose flour, unbleached and unsiftedcornmeal (for dusting baking pan)To make the dough I use a Kitchen Aid mixer with the dough hook ... Learning to Sew
A few weeks ago, Eric needed the hems of his pants to be restitched. In the past, I've always taken these kinds of problems to my mother. I was afraid to attempt sewing something myself, thinking that I would probably mess it up. That day I went to Hobby Lobby, and picked up my first needle and thread. From then, I realized this isn't as scary as I had once thought. "What's the worst that can happen? I rip the seam out and try again!" That message empowered me! The next weekend, my mom and I pulled out her old sewing machine which needed some serious love. We had to take it apart and give it oil to bring it back to life---but since then it has been running smoothly. Here's a snippet of my life lately. Making an apron ruffled ... View Post
sweet saturday
After the full work week we both had, we turned off our alarm clocks and slept until we woke this Saturday. We had a nice little day planned and we're blessed to spend all day together. Eric and I have really been into avocados lately, so this morning I decided to switch up our usual {scrambled egg and swiss on english muffin}. We toasted some whole grain bread and spread creamy avocado on top, then layered with bright and juicy tomato and a fried egg. It was a hit and Eric's belly was happy. I am sure that this little creation will become a new staple in our home this summer. After breakfast, we went to do some errands, and one included a trip to Freshfield Farms for produce. We absolutely love this place, if you live in the Orlando area, be sure to pay them a visit. They ... View Post
Skinny Mocha Frap
Good afternoon everybody. This is the second week of my first job as a dietitian and our fall marathon training. We did a track workout this morning at 6:30, and I had to be to work by 8:00 so I was a little rushed doing the morning routine and left the house without my coffee. When I got home from work today, I was a little exhausted and in need of a pick me up. I would say that I'm kind of a coffee snob in that I will not drink rewarmed joe, so I decided to pull out the blender and make use of the coffee I wasted earlier. With chocolate as a favorite of mine, I recreated the mocha frap--it's deliciously healthy and a great way to get some calcium too. Enjoy, it's refreshing!Ingredients:1/3 cup soy milk (I use Silk, DHA added)1/4 cup coffee, chilled or room temp1 tbsp Hershey's chocolate ... View Post
Happy Anniversary, Love.
Husband, I love you. Thank you for this exciting and wonderful year we have shared. Our God truly has the best plans, far more than our hearts could have ever imagined. This year has been a blessing! We got married, honeymooned in Naples, cooked together, danced a lot, enjoyed walks, fed the birdies down by the lake. We have made this new place in Orlando our home. You have let me redecorate our little bungalow, turning your bachelor pad into a cozy place for two. You even looked the other way when I took down the football pictures that you had up on all of the walls. We have explored this our community by foot, you even woke up at 4:30 am to do long runs and track workouts as we trained for our first marathon. Even though you became injured last year, you were there for me. You ... View Post
