Y’all, last week was INSANE! It was seriously one thing after another. So much so, this scheduled post did not get published because my computer died right before I hit publish. Good things were just not on my side. So here you go….the final recipe and blog post of spaghetti squash week!
My week has imploded. There are some days, that I feel like I’m rockin’ this mom/business owner thing and then others that I feel like all hell broke loose. I feel stretched and over committed and most of it has to do with the pressure that I put on myself to “do it all”, and make it look easy.
Well, news flash it’s not easy and I have to start saying no. No to doing by the “baby” book and the clean house and crossing off everything on my never ending to do list. Some days I just have to give myself more GRACE. I have big goals for the year which takes a lot of determination and focus, and my mind just isn’t there some days.
A good friend told me that maybe I need to adjust, to give myself more time to just be M.O.M to release some of that pressure to perform. I think she sounds like a wise friend too. I do need to allow myself to take a step back, and just.be.mom… not every day because that’s not my personality but some days. Because being a mom is special, and being too consumed with work makes me miss those special and precious moments of getting to stay at home with my babe.
I’m realizing the hard way that being a working from home mom is a double edge sword. I get to be with my precious baby, but when he’s screaming nonstop and I have a deadline… I have to make a decision. Or when I finally get him to sleeping baby state at 10pm at night I have to decide, do I want to crank out that blog post and answer those emails or just take a few moments to myself… to just be alone and do nothing.
There are those days like today where I’m faced with this reality of the tough calling of being a stay at home mom, it’s not all roses. The if onlys we tell ourselves are only lies. And today baby wins, as I type away holding a sleeping boy in my lap. Days like today I just have to be okay with not finishing my to-dos and embracing motherhood because these moments of holding a sleeping babe in my arms are fleeting.
PrintSpaghetti Squash Chicken Burrito Bowls
- Prep Time: 25 mins
- Cook Time: 45 mins
- Total Time: 1 hour 10 mins
- Yield: 2 bowls 1x
Ingredients
- 1 spaghetti squash
- 6 ounces chicken breast
- 1 teaspoon olive oil
- 1/2 red onion, sliced
- 1/2 green pepper, sliced
- 1/2 cup pinto beans
- 1/2 cup corn
- 1/4 cup guacamole
- 1/2 lime, juiced
- 1/4 cup cilantro, chopped
Instructions
- FOR CILANTRO LIME SPAGHETTI SQUASH: Preheat oven to 425 degrees F; line baking sheet with parchment paper.
- Cut spaghetti squash in half and scrape out seeds and discard.
- Season spaghetti squash with salt, pepper and drizzle with olive oil.
- Place spaghetti squash halves skin side up and bake in oven for 35-45 minutes.
- Remove from oven and set aside to cool. Using a fork, scrape out spaghetti squash and transfer to a bowl. Add lime and cilantro to spaghetti squash and gently combine.
- While spaghetti squash is roasting. Grill peppers and onions with a little olive oil in cast iron skillet until veggies are softened, and corn and grill until slightly charred. Remove veggies from pan.
- Season chicken breast with salt and pepper and cook until chicken is done and juices run clear. Remove from heat and allow to rest for 5 minutes. Dice chicken.
- To make bowls, place cilantro lime spaghetti squash in spaghetti squash skin. Top each with chicken, grilled veggies, beans and guacamole.
