PBJ Coconut Milk Chia Pudding. Vegan chia seed pudding made with coconut milk, peanut powder, raspberries, and chia seeds.

Ingredients
- 3 tablespoon chia seeds
- 1 teaspoon maple syrup
- 1 teaspoon vanilla extract
- 3 tablespoon peanut powder
- 1 cup unsweetened coconut milk beverage (NOT canned coconut milk)
- 1/2 cup frozen raspberries
Instructions
- In a jar with a lid (or two separate jars), add chia seeds, maple syrup, vanilla extract, peanut powder and coconut milk.
- Secure lid on jar(s); and shake until fully mixed.
- Refrigerate for 4 hours, or overnight.
- Top each with raspberries, peanut butter, and/or peanuts (optional).
