When I first had Parker, I (or my mom) made these energy bites weekly. These bites are that perfect snack to eat when you are pressed for time and you want something sweet.
Which reminds me that I need to make another batch of these Cookie Dough Energy Bites because I’ve been craving ice cream post dinner, and although we have indulged it (last night), hello…. I should make these for a healthier option 🙂
This Cookie Dough Energy Bite recipe has been made over and over again for all of my new mom friends because I know how helpful having a little snack on hand is at 3am when you’re nursing a baby. Today, I’m making these for my friend Katie, who just had her 3rd baby all under 3 years!! Whoa, guys. That’s a lot of everything baby. I really don’t know how she’s doing it.
She needs these energy bites! And so do you.
One thing I really love about this recipe is I usually have all the ingredients on hand to whip up a batch in a flash. Yes, your hands will get a little messy rolling these balls. The trick for that is to just keep pressing them together and adding a little water as needed when you’re rolling them.

Description
These Cookie Dough Energy Bites are exactly what you need right now!! They cure that sweet tooth and are less expensive than pre-made energy bars. Easy to make and gluten free.
Ingredients
- 1 1/2 cup raw oats (certified GF if needed)
- 1/2 cup honey
- 3/4 cup almond butter
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup unsweetened coconut flakes
- 1/2 cup sliced raw almonds
- 1/2 cup ground flaxseeds
- 2–4 tablespoons water
Instructions
- In a large bowl, stir together oats, honey, almond butter, chocolate chips, coconut flakes, almonds, flax and water.
- Roll cookie dough into 24 uniform balls.
- Store in airtight container in the refrigerator until ready to eat. No baking required!

Made these and the taste was delicious but they did not roll into a ball. Just crumbled and stuck to my hands. Maybe too wet?

Sad day. Did you use unsweetened coconut flakes? Sometimes the type of coconut flakes or nut butter can be the difference in consistency. How many tablespoons of water? You can also spray hands with coconut oil and mash them together firmly to get to press into a ball.

I typically use regular old fashioned rolled oats in my energy ball recipes 🙂 but either could work.

Oh bummer! While I haven’t tested this recipe without coconut, you could possibly use more oats to replace the coconut flakes in this recipe. Hope it works out (it’s pretty flexible recipe)– and if so please come back to let us know!

I’ve made these several times and they are quite delicious! My husband loves them too! I substitute regular PB bc all the almond butter I am able to find is like 10+ dollars a jar! They still turn out yummy ( but perhaps some of the healthiness is lost?) I was curious if you’ve tried freezing them? I was thinking about making a double batch this time but was concerned about their shelf life in the fridge.

YAY! So glad to hear that Michelle! Do you have a Trader Joes? I LOVE their Almond Butter. But PB is totally fine and healthy too… just has a stronger taste. I haven’t frozen them, BUT I do store them in the fridge. I can’t say they have lasted longer than a week in our house tho. You’ll probably eat them up before they go bad. Let me know how they do if you try them in the freezer.

I don’t understand how can oats be gluten free when the manufacturers in NZ say they inherently contain gluten??

hey Fiona! I am not personally GF however, I know folks that are and enjoy Bobs Red Mill Oats! They are a great company and have certified GF oats, so this may be a great option to check out 🙂

Oats can be contaminated with gluten because they are often processed as the same plant as wheat. If you need to be gluten free for medical reasons, certified GF oats are recommended.
