We’re back again today with another peanut butter recipe… but this time it’s CRUNCHY peanut butter‘s chance to shine. These Crunchy Peanut Butter Chocolate Chip Bars are all the rage– perfect for a quick snack after school or work. Heck, they’re delicious for breakfast or to satisfy those late night PB and chocolate cravings.
There are days where I’m all about the creamy peanut butter (more PB drizzle please) and then days when I can totally be down with the crunchy peanut butter side… hello Crunchy Peanut Butter Chocolate Chip Bars, I’m looking at you.
These bars are like simply irresistible. So so good! I’m a snacker at heart, so I love having healthy snacks on hand that are ready for me so I don’t errrr find random pieces of chocolate (or chips) to nosh on when I’m feeling peckish.
Peckish. I heard this from a client once and it stuck. Do you ever get this way? It’s like you’re not tummy hungry, but a snack sounds good… and it’s better that you have healthy food on hand to eat so that you don’t end up picking at something that is lesser than?
Yep that’s me.

Description
These Crunchy Peanut Butter Chocolate Chip Bars are all the rage– perfect for a quick snack after school or work. Heck, they’re delicious for breakfast or to satisfy those late night PB and chocolate cravings.
Ingredients
- ½ cup Crunchy Natural Peanut Butter
- ¼ cup raw honey (or brown rice syrup)
- 1 teaspoon vanilla extract
- 2 cups puffed rice cereal
- ¼ cup dried tart cherries
- ¼ cup semisweet chocolate chips
- Pinch of sea salt
Instructions
- In a large bowl, stir together peanut butter, honey, and vanilla.
- Fold in rice cereal, tart cherries, chocolate chips and a pinch of salt.
- Line square pan with parchment paper and press mixture firmly into the pan.
- Place bars into the refrigerator to chill for 20 minutes.
- Cut into 9 pieces; store in airtight container in the refrigerator.
