Ingredients
- ½ cup whole milk Greek yogurt
- 1 tablespoon curry powder
- 2 tablespoons maple syrup
- 4 cups cooked shredded chicken
- Salt and pepper to taste
- ½ cup diced celery
- ½ cup diced red bell pepper
- ¼ cup diced red onion
- ¼ cup chopped parsley
- 1 cup red grapes, sliced
Instructions
- In a large bowl, mix together Greek yogurt, curry powder and maple syrup.
- Gently stir in the shredded chicken to coat the meat in Greek yogurt mixture.
- Add celery, bell pepper, onion, parsley and grapes and toss to incorporate into chicken salad.
- Enjoy curry chicken salad on a bed of greens or in a wrap or sandwich.
