This girl does not know what to do with herself… the babe is peacefully sleeping again.
We went through a rough patch, from birth through 7 weeks where the only place baby would sleep was in our arms…he wasn’t picky on who he’d sleep with, but he was a serious around-the-clock-hold-me-baby.
I tried all.the.devices to get baby to sleep, all to no avail.
If you follow me on Instagram when Parker slept for nearly 2 hours ALL BY HIMSELF in his cousin’s swing, this mama was like…we’re going out to purchase the swing pronto!!
There was a time that I protested the swing. It’s hideous looking and massive. I was one of those, I’ll never let baby equipment take over the house type of person pre baby. I had to have one of those space age modern looking rockers that I thought our baby would just love because it was stylish… but not a chance. He screamed every time we put him in it. So now it sits cutely (is that even a word?) in the nursery collecting dust.
Today, I’m a proud owner of a hideously large ugly looking swing that’s taking over my house. Thanks babe.
But good things come when babies sleep… like Eggnog Pancakes with Eggnog Whipped Cream. Mama has some time to cook and eat and take food photos and write blog posts again. Yippee! For now anyways 🙂
These pancakes were adapted from our favorite Gluten Free Buttermilk Pancakes. You can make these with regular or gluten free flour. They both work great in this recipe.

Description
Impress your family and house guests with a stack of festive Eggnog Pancakes topped with creamy Eggnog Whipped Cream.
Ingredients
- For Pancakes:
- 2 cups sifted all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 eggs, slightly beaten
- 2 cups eggnog
- 1 teaspoon pure vanilla extract
- 1/8 teaspoon nutmeg
- For Topping:
- 1/2 cup heavy whipping cream
- 1/4 cup eggnog
- 1/8 teaspoon nutmeg
- cinnamon, for dusting
Instructions
- For Pancakes:
- Sift flour, and measure out 2 cups of sifted flour and place in a large bowl.
- Whisk baking soda and salt into flour.
- In a separate bowl, whisk together eggs, eggnog, vanilla extract, and nutmeg.
- Pour wet ingredients into dry ingredients and stir just until combined.
- Ladle ¼ cup of batter per pancake onto hot lightly greased griddle.
- Cook pancake until it bubbles on one side, and flip.
- Cook until browned on other side.
- To freeze leftover pancakes, line baking sheet with parchment paper and place on sheet individually and place in freezer until slightly frozen and transfer to freeze safe ziploc bag.
- For Topping:
- Combine cream, eggnog and nutmeg in mixing bowl and whip together until soft peaks form. Add dollop of eggnog whipped cream and a dusting of cinnamon to top of pancakes for a festive and tasty flare.

yum!! These look great, and they have a full 2 cups of eggnog in them, I bet they really taste eggnogey too. Glad your baby is sleeping better, even if its in a big ugly swing!
