Fiesta Fattoush Salad made with fried flour tortillas, BUSH’S Black Bean Fiesta™, and homemade cilantro lime dressing. If you need an easy weeknight dinner packed with veggies… THIS. IS. IT!
You might be wondering, “what is fattoush salad?” An authentic Lebanese fattoush salad recipe is a combo of fresh chopped veggies, lots of herbs and fried pita bread tossed in a citrus dressing.
So yum, right?
Yep, so much yum we gave this traditional salad a tex mex flair thanks to BUSH’S Black Bean Fiesta™.
How to Make Fiesta Fattoush Salad?
Fried Flour Tortillas
Chopped Veggies (tomato, bell pepper, onion, romaine, avocado)
Lots of Cilantro
BUSH’S Black Bean Fiesta™
Cilantro Lime Dressing
We recommend flour tortillas because they provide a texture similar to pita – exciting and crispy!
You can also use corn tortillas here too. Crisp up flour tortillas in a heavy skillet, like a cast iron, for a perfect golden color and flavor.
And you can totally add grilled chicken for to a Fiesta Chicken Fattoush Salad. Grilled steak would be yum too! Or just keep it veggie to enjoy the benefits of beans.
Beans provide a satiating combo of protein and fiber to keep you fuller longer and vitamins and minerals too, like: iron, calcium, potassium, folate, zinc and magnesium.
Now that you’re craving a good fattoush salad with crispy flour tortillas, fresh veggies and savory beans… let’s get to the dressing.
Ingredients for Cilantro Lime Dressing
Olive oil
Lime juice
Garlic
Jalapeno
Cilantro
Salt and pepper
This really is an easy salad dressing to toss together. We keep this dressing thick and chunky. BUSH’S Black Bean Fiesta™ also provides part of the dressing for this salad so don’t drain the can!
This is one of the many reasons I love cooking with BUSH’S® Savory Beans like their Black Bean Fiesta. Each bean has been slow cooked in special spices to lock in the flavor so you don’t have to use extra spices and ingredients in your recipes.
Keeping it simple for quick weeknight dinners… oh yes!
