Ingredients
- 4 over-rippened bananas, smashed
- 2 eggs
- 1/2 cup creamy almond butter
- 1/4 cup maple syrup (or honey)
- 1 teaspoon almond extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup all purpose gluten free flour
- 3/4 cup almond flour
- 1/2 cup unsweetened vanilla almond milk
- 1/4 cup semi sweet chocolate chips
- 1/4 cup walnut halves, chopped
Instructions
- Preheat oven to 350 degrees F. Line 12 count muffin tin with foil liners.
- In large bowl, whisk together bananas, eggs, almond butter, maple syrup, and almond extract.
- Stir in baking soda and salt.
- Stir in flours alternating with the milk until fully combined.
- Fold in chocolate chips and chopped walnuts.
- Spoon batter into muffin tins and bake for 15 minutes.
