Seriously, these little babies are so tasty, simple to make and filled will all the good stuff. If you’re looking for grab and go high protein breakfasts, you have to try this recipe for Ham Spinach Egg Cups. It will change your breakfast life. Sure, they would work for a yummy snack too.
You guys should know that egg muffin quiche recipes are my nemesis. BECAUSE THAT PAN CLEAN UP! Why do the eggs stick to the tin and not come off?? Ugh.
Line the muffin pan with ham, and problems are solved.
Are you a meal prep fan?? I love how easy these guys are to prep. You can see here – line a muffin cup with deli ham or turkey (make sure that it’s thick deli meat– thanks for that suggestion Meaghan!!) and then pop in all your favorites (my choice was chopped spinach and cheddar for this recipe) and top with an egg!

These Ham Spinach Egg Cups take about 20-25 minutes to cook, depending on if you want the egg to be soft baked or more firm like I did in this recipe. Although I do love a good soft baked egg over a thick and grainy slice of buttered toast, oh YES!

Ham Spinach Egg Cups are an easy meal prep that is high in protein and low carb. Simply bake in a muffin tin to have a healthy breakfast at the ready… made with only 4 ingredients!
Ingredients
- 6 thick slices deli ham
- 6 eggs
- 6 tablespoons chopped spinach
- 6 tablespoons shredded cheddar cheese
- freshly ground pepper
Instructions
- Preheat oven to 350 degrees F.
- Spray muffin pan with cooking spray. Line muffin pan with ham slices, and press gently into cup.
- Add cheese, spinach and top with egg.
- Bake for 20-25 minutes or until egg yolk is cooked to desired firmness.
